Cream Cheese Jeweled Walnut Yam Pancakes






     Cream Cheese Jeweled Walnut Yam Pancakes!!!  I LOVE YAMS!!!  Found out they are sweeter than Sweet Potatoes, and the Jewel Yam is the best... look for them in your stores now!!!  If you can't find them, Sweet Potatoes will do!  Either way you can't go wrong with this recipe, especially when topped with Cream Cheese, Maple Syrup and Walnuts!!!  Calories are 283, 21g net carbs and 40g protein.  YOU ARE WELCOME :)

Ingredients~
1/4 cup cooked, skinned, and mashed Jewel Yam
1/4 cup Egg Whites
1 scoop Vanilla Milkshake Quest Protein Powder
1/4 cup lowfat Cottage Cheese
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla
2 Tablespoons Cream Cheese Frosting, recipe below
Walnut Half, chopped in pieces
Walden Farms Pancake Syrup

     Mix together Yam, Egg Whites, Protein Powder, Cottage Cheese, Baking Powder, Cinnamon, and Vanilla.  Drop by scant 1/4 cup in Pam coated skillet til golden brown on each side. ( should yield 4 pancakes)  After Pancakes have cooled, pipe several dots of frosting around the perimeter of each pancake and stack on top of one another, and pipe a dollop in the top center.  Sprinkle with Walnut pieces and drizzle with Syrup.  Enjoy  :)

Chunky Monkey Cookies~YUM!!!





     MONSTER COOKIES!!!  Now you can have your cookie and eat it too!!!!  You are going to flip out over how delicious these little circles of YUM slide down your gullet!!!  It's hard to believe these are actually good for you!!! ... but they are!!!  This recipe makes 36 cookies, each one is 61 calories, 2g net carbs and 6g protein!!  I now know what will be stacked in my cookie jar ...  ;)

Ingredients~
1 Jumbo Egg, beaten
2/3 cup Egg Whites
2/3 cup Oat Flour
2 Tablespoons melted Coconut Oil
1/2 cup Erythritol
1/2 cup reduced fat shredded Coconut
1 scoop Multi Purpose Quest Protein Powder
1 scoop Vanilla Milkshake Quest Protein Powder
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla
Smores Quest Bar, chopped into small chunks
Cookie Dough Quest Bar, chopped into small chunks
Peanut Butter Supreme Quest Bar, chopped into small chunks
Coconut Cashew Quest Bar, chopped into small chunks
Vanilla Almond Crunch Quest Bar, chopped into small chunks
Double Chocolate Chunk Quest Bar, chopped into small chunks

     In large mixing bowl, start adding all ingredients in order listed, stirring well after each addition.  Drop by heaping rounded Tablespoons onto Silpat lined cookie sheet and bake at 350 for 8-9 minutes, remove while still moist looking.  MAKE SURE TO SLIGHTLY UNDER BAKE AS PROTEIN BAKING TENDS TO DRY OUT WHEN COOKED FULLY.  Enjoy  ;)

Frosted Banana Walnut Bars




     My fun friend Wendy is at it again!!!  She re-created my Sweet Potato Bars into Banana Walnut Bars, and these are phenomenal !!! This recipe makes 9 servings, each one has 143.5 calories, 12 net carbs and 12.6g protein.  Lovin on this flavor combination, this is a must try  ;)

Ingredients~
1.5 cups mashed Banana
1 Egg
3/4 cups Egg Whites
2 scoops Vanilla Milkshake Quest Protein Powder
1/4 cup Coconut Flour, found at Vitacost.com

Turkey Turkey Pizza with High Protein Low Carb Crust

Ingredients for Crust~

     Mix all crust ingredients and pat onto Silpat lined cookie sheet into large rectangle, bake at 450 for 15 minutes.  Remove and cool, cut into 4 equal pieces.  Top with topping of your choice and finish baking til cheese is melted and vegetables are crisp tender, at 450 for 7-9 minutes.  I will use left over Turkey, Turkey Pepperoni, diced Tomatoes, sliced Bell Peppers, Mozzarella Almond Cheese, Mushrooms, Onions, and Pizza Sauce.  But don't stop there, there are no rules, just let your Pizza juices flow!!!  Enjoy  ;)

Fudge Pecan Walnut Tart



     This is definitely one of those rare occasion desserts!!!  High in Fat, High in Flavor and Low in Carbs.  So every once in a while, go crazy on a Holiday and have a sliver!!!  This makes 10 servings, (macros are not including Pecan garnish or Cool Whip topping), each slice has 307 calories, 3.3g net carbs and 8g protein.  Go slow and savor every bite!!!  ;)

Ingredients~
1.5 cups Pecans
4 Tablespoons Coconut Oil, divided
1/2 scoop Quest Peanut Butter Protein Powder
1/3 cup Lakanto Monk Fruit~use code Paige20 at checkout for discount
2 teaspoons Himalayan Salt, divided
1.5 cups Walnuts
1/2 cup unsweetened Cocoa Powder
1/2 scoop Quest Chocolate Protein Powder

Sugared Pecans for garnish, if desired
Whipped Cream for garnish, if desired

     Place Pecans, 2 Tablespoons Coconut Oil, Peanut Butter Protein Powder, Monk Fruit and 1 teaspoon Salt in Food Processor and blend til smooth, pat in bottom of Spring Form Pan and set in refrigerator til chilled and firm.  Meanwhile, place Walnuts, Cocoa Powder, 2 Tablespoons Coconut Oil,  Chocolate Protein Powder, Syrup and last teaspoon Salt in Food Processor and blend til smooth, and pour over top of crust, pat down til smooth.  Chill til set.  Garnish with Pecans and Whipped Cream if desired, Enjoy  :)


Mozzarella Bacon Chicken over Spaghetti Squash





     I'm on a Spaghetti Squash roll, and I want to try every thing I would put over pasta on top of a Spaghetti Squash!  I swear you can not tell the difference if your topping is full of flavor!  And the trade offs are soooo well worth the experiment!  Give your next pasta dish a make over and see what you think!!!  In good health~paige  ;)

Ingredients (makes 4-6 servings)~
Spaghetti Squash, cut in half lengthwise, remove seeds and strands
1 Tablespoon EVOO
1 medium-large sweet Yellow Onion
1 Tablespoon of chopped jarred Garlic
Dash Cayenne
1 pound grilled and diced Chicken Breast
7oz 2% Greek Fage Yogurt
8oz grated Mozzarella Almond Cheese ( use regular Mozzarella if necessary), divide in half
7.3oz jar of sliced Mushrooms
2 cups cooked Broccoli pieces
2 Roma Tomatoes, chopped and drained on paper towel
4 slices cooked and crumbled Turkey Bacon
Salt and Pepper to taste

     Cut Squash in half lengthwise, remove seeds and strands, bake face down in foil lined pan at 400 for 45 minutes, remove and cool.  Heat EVOO in skillet, add Onion, Garlic and Cayenne Pepper til golden brown.  Stir in diced Grilled Chicken, Yogurt, 1/2 of the Mozzarella, Mushrooms and Broccoli.  Salt and Pepper to taste.  Flip each Squash face up and fill each cavity with the Chicken mixture, top with remaining Mozzarella, Tomatoes and Bacon.  Plate, Serve and Enjoy  ;)  ps This should equal 4-6 servings.

Grilled Maple Walnut Chocolate Chunk Sweet Potato Pie Bread






     I. Could. Die. Die. Die. !!!  You will simply not believe the level of YUM on this plate!!!  I urge you to rush to your nearest kitchen and start putting the small pot in the big pot!!!  Calories are 263, 12g net carbs and 31.3g protein.  If you want to subtract 80 calories, then you can use a half Quest Bar for the topping instead of the whole bar.  Either way, you can't go wrong with this rich luscious symphony of flavor  ;)

Ingredients~
1/8 loaf Sweet Potato Pie Bread, cut in two slices ( recipe below)
1 Double Chocolate Chunk Quest Bar, diced into small pieces
1 Walnut Half, broken into small pieces, found at Vitacost.com

Iced White Chocolate Cinnamon Roll Leaf Blondies






     Yes I made Cinnamon Roll Leaves to garnish my Blondie, (it's a free world and I can do what I want)!!!  I will let you in on a little secret, I softened a Cinnamon Roll Quest Bar in the microwave and then pressed those suckers in a leaf mold and popped them into the freezer to set up~Voila ;)  The other funzie is the addition of White Chocolate Chips (who would be mad about that).  Plop on some Cream Cheese Frosting, a few leaf sprinkles for garnish and you have yourself a lovely dessert!!!  This recipe makes 9 pieces, each one having 128 calories, 6.7g net carbs, and 13.1g protein.

Ingredients~
1 Cinnamon Roll Quest Bar, softened in microwave and pressed into leaf mold, then freeze to set up.
1 Tablespoon melted Coconut Oil, found at Vitacost.com
Cinnamon Roll Carbmasters Yogurt 6oz, found at Kroger stores
1 Jumbo Egg
1/3 cup Egg Whites
1/3 cup Oat Flour, found at Vitacost.com

1 scoop Multi Purpose Baking Protein Powder
3 Tablespoons Sun Spire White Chocolate Chips, divided in half, found at Vitacost.com

Heavy Dash Cinnamon
9 Tablespoons Cream Cheese Frosting (recipe below)
Leaf sprinkles for garnish, if desired

     Soften Quest Bar in microwave, press into leaf molds, and put in freezer to set up.  Pop out after frozen, set aside. ( you will need 18 to put 2 on each Blondie).  Meanwhile stir all ingredients, except for half Chocolate Chips and Frosting, in a bowl and pour into greased 8X8 and bake at 350 for 20 minutes, making sure to not over bake as protein has a tendency to dry out, remove Blondies when still slightly wet on top.  After removing, sprinkle with remaining Chips, cool and chill in fridge til set up. Add one Tablespoon Frosting to each slice, and top with 2 Leaves, as well as sprinkles if desired.  Enjoy  :)

Sweet Potato Pie Bread





     Sweet Potato Pie Bread combines the best of two worlds...a bread like shell with a pie filling middle!!!  Yes that just happened!!!  The other yummy factor is that this batter is not beaten, rather stirred, leaving sweet loving chunks of potato to melt in your mouth!!!  Move over Pumpkin, there is a new pie in town!!!  For an 1/8 of the loaf it is only 90 calories, 9g net carbs and 11g protein.

Ingredients~

Maple Bacon Chocolate Chip French Toast





     Sometimes I don't know where I come up with these things... but... Maple Bacon Chocolate Chip French Toast just seemed like a good idea!!!  And oh how right I was ...   You might think I'm kidding, but I literally licked my plate ... not even ashamed...  Only 2 problems,  I wanted another batch ...and the syrup got matted in my hair...  :/   Calories are 211, with 7.6g net carbs and 33.2g protein.  I dare your mouth not to water looking at these pictures  :)  PS  Plate licking comes with consequences ... wear a ponytail ...

Ingredients~
3 Tablespoons Egg Whites
1 Tablespoon Cinnamon Swirl Cellucor Protein Powder, found at Vitacost.com
1/8 of a loaf of Sweet Sugar Bread ( recipe below)
1 slice Turkey Bacon
10 Lily's Stevia Sweetened Dark Chocolate Chips, found at Vitacost.com
Spray Butter

     Mix Egg Whites and Protein Powder in bowl, slice bread into 4 pieces and soak in Egg mixture on each side and lay in Pam coated hot skillet (pour any remaining on top of bread), cook til golden brown on each side.  While cooking, microwave Bacon for 1 minute, then crumble, set aside.  Plate cooked French Toast, top with crumbled Bacon, Chocolate Chips, Spray Butter and a drizzle of Maple Syrup.  Enjoy  ;)

 Blend Yeast, Hot Water, and Coconut Sugar in bowl til all melted and blended.  Add Coconut Oil, Egg, Egg Whites, Quest Protein Powder, Rice Protein, Psyllium and salt, stirring thoroughly.  Cover bowl with a hand towel and rest for an hour in a draft free warm environment.  Pour into greased and parchment lined loaf pan.  Bake at 325 for 30 minutes.  You may notice that the top middle portion of the bread still appears moist, but I have learned that a smidgen of under baking yields more moisture in the end result, along with better flavor.  It also will continue to set up as it cools.  Trust me on this one!  Spray the top with a few spritz of Spray Butter and finish it off with a sprinkle of Erythritol on top of the loaf!!!  Enjoy  ;)

     Thank you Quest Multi Purpose Baking Protein Powder, this has changed the face of dinner!!!  This is the perfect way to sneak a little more protein into any meal of the day, and no one will be the wiser!!!  This recipe makes 8 full flavorful cup size servings for 354 calories, 24g net carbs and 31g protein.  The quentisential  hearty warm winter meal, throw together a green salad and you will have a winning combination on your hands!!!  :)

Ingredients~
1 Tablespoon Extra Virgin Olive Oil
1 Yellow Onion, diced
1 Tablespoon chopped jarred Garlic
Heavy dash Chili Powder
1 pound 95% or higher lean ground Beef
2 teaspoons LB Jamisons Chicken Base or 2 Boullion Cubes
2 cups Water
Small can chopped Green Chili's
20oz Green Chili Enchiliada Sauce
15oz can drained Black Beans
3/4 cup Quinoa
3 scoops Quest Multi Purpose Protein Powder
7oz  2% Fage Yogurt
1/4 cup lowfat Cheddar Cheese
1 small Avocado, diced
1 medium Roma Tomato, diced and drained on Paper Towel for as long as possible
Cilantro, for garnish
Sour Cream, for garnish
Salsa, for garnish

     Heat EVOO in skillet and add Onions, Garlic, and Chili Powder  til golden brown.  Add Beef, cook thoroughly, drain.  Add Chicken Base, Water, Chili's, Enchilada Sauce, Black Beans and Quinoa and bring to simmer, stirring til Chicken Base is dissolved.  Put on lid, reduce heat to soft simmer for 15-20 minutes, or until Qunioa cooked.  Remove from heat and stir in Protein Powder, let cool and thicken, stir in Yogurt and pour into greased cake pan, cover with foil and let set up over night or for several hours to thicken in fridge.  Remove and bake at 350 for 30 minutes, sprinkle with Cheddar and put bake in oven til melted.  Remove and garnish with Avocado, Tomato, Cilantro, Sour Cream and Salsa.  Enjoy  :)

Ingredients~
4oz Baked and Skinned Jewel Yam, sliced into 3 disc's

Pumpkin Pecan Bars



     My fun friend Wendy re-did my Sweet Potato Bars just in time for Thanksgiving!!!  Hello Pumpkin Pecan Bars !!!  YUM YUM !!!  This would easily fit beautifully on any Holiday Table~ Have dessert and health all at the same time!!!  #perfectcombo  This makes 9 servings, each bar is 113 calories, 6.4g net carbs and 11.9g protein!  Thank goodness for creative buddies, wonder who will create what next !!! #anticipation

Ingredients~
15oz Pumpkin Puree
2 Eggs
3/4 cup Egg Whites
2 scoops Vanilla Milkshake Quest Protein Powder
1/4 cup Coconut Flour, find at Vitacost.com
1 Tablespoon Pumpkin Pie Spice
1 teaspoon Vanilla
1 teaspoon Baking Powder
3 Tablespoons Pecans, chopped

Frosted White Chocolate Raspberry Cupcakes






     Frosted White Chocolate Raspberry Cupcakes are my new best friend!!!  Not just because they taste fantastic and make me smile when I look at them, but wait til you hear the stats on these ruby beauties~ per cupcake with Flower and Tablespoon of frosting is 89 calories, 3g net carbs, and 10.4g protein.  Aren't you dying for a bite!!!???  This recipe makes 12 cupcakes, or in my experience what I refer to as breakfast, lunch and dinner... and afternoon snack  ...  ;)

Ingredients for Protein Frosting Flowers~
1 White Chocolate Raspberry Quest Bar, torn into pieces
1/4 cup 30 cal/cup Almond Milk, found at Vitacost.com
Pink Food Coloring

     Mix Quest Bar pieces and Milk and microwave for 20-30 seconds and stir til smooth, add food color and continue stirring, pour into flower candy mold and place in freezer til solid.  Pop out when ready.  Won't stay frozen long, so use as needed. Decorate with a dot of yellow dyed protein frosting in the middle if desired.  Protein Frosting in recipe below.

Ingredients for Cupcakes~
2 servings or 4 grams of Sugar Free Raspberry Jello, or Simply Delish Natural, found at Vitacost.com
1/2 cup water
1 White Chocolate Raspberry Quest Bar, torn into pieces
1/2 cup Reduced Fat Shredded Coconut, found at Vitacost.com
1/2 cup fresh Raspberries
1/3 cup 30 cal/cup Almond Milk, found at Vitacost.com
6oz Kroger Carbmasters Raspberry Yogurt
1 Jumbo Egg
2 scoops Vanilla Milkshake Quest Protein Powder
1/2 teaspoon Baking Powder
1/2 teaspoon Baking Soda
Dash Cinnamon
Dash Vanilla

12 White Chocolate Raspberry Protein Flowers ( recipe above)
12  Tablespoons Cream Cheese Protein Frosting (recipe below)
12 fresh Raspberries, for garnish

     Mix Jello and Water in saucepan and heat til melted, stirring continually, then stir in Quest Bar pieces til melted thru, remove from heat and set aside to cool.  Add Coconut Shreds to Magic Bullet and grind til powdered, add Raspberries, Milk, Yogurt and Egg and continue to whip til blended thoroughly and pour into cooled saucepan mixture, stirring to blend.  Add the Quest Protein Powder, Baking Powder, Baking Soda, Cinnamon and Vanilla, stirring well and then divide equally into 12 Silpat lined Muffin Tins.  Bake at 350 for 18 minutes, may still feel a smidge wet in the middle, but better to under bake protein than over bake as it turns out very dry.  Remove from oven and cool. Pipe a Tablespoon of Protein Cream Cheese Frosting on each and garnish with a Frozen Protein Flower and one Raspberry.  Enjoy  ;)
