Butternut Apple Caramel Cheesecake Pancakes






     Who knew Squash could be so darn delicious!!!!  ... ESPECIALLY in Pancakes!!!  Well I do, and it's AWESOME!!!  And get a load of these stats~235 calories, 15g net carbs, and 28.6g protein.  So thankful it's Fall and Squash is in full Season  ;)

Ingredients~
1/4 cup cooked Butternut Squash ( I sometimes cheat and buy it already cubed in a bag in the produce department~Walmart is the only store around here I can find it fresh in the produce department. Can you say convenient!!!???)
1/4 cup Egg Whites
2 Tablespoons Cottage Cheese
1 teaspoon Baking Powder, found at Vitacost.com
Dash Cinnamon, found at Vitacost.com
Dash Vanilla, found at Vitacost.com
1 Tablespoon Oat Bran, found at Vitacost.com
1 Tablespoon ground Flax, found at Vitacost.com
2 Tablespoons Cinnamon Swirl Cellucor Protein Powder, found at Vitacost.com
1 Tablespoon Caramel Walden Farm's Syrup, found at Vitacost.com
3 Tablespoons Cheesecake Whipped Frosting ( recipe below)
1 Tablespoon dried diced Apples, Bob's Red Mill, found at Vitacost.com

     Grind til smooth in Magic Bullet the Squash, Egg Whites, Cottage Cheese, Baking Powder, Cinnamon and Vanilla. Then stir in Oat Bran, Flax, and Protein Powder.  Cook in Pam coated skillet til golden brown on each side, dropping by 1/4 cup batter per pancake.  Spread each pancake with a teaspoon of the Cheesecake Whipped Frosting, except the top pancake.  Stack the frosted pancakes on a plate and top with the Caramel Syrup, remaining Cheesecake Whipped Frosting, and finish by sprinkling with Apple Bits.  Enjoy  ;)

Ingredients for Cream Cheese Protein Frosting~
1 scoop Gold Standard French Vanilla Casein Protein Powder ( found at Vitacost.com)
1 Tablespoon Sugar Free Cheesecake Pudding Powder
4oz Fat Free Cream Cheese, softened to room temperature
1/4 cup Low Fat Cottage Cheese
2 Tablespoons Coconut Flour, found at Vitacost.com
1/3 cup Erythritol, found at Vitacost.com
1/2 cup of 30 cal/cup Almond Milk, found at Vitacost.com
10 drops French Vanilla Stevia, found at Vitacost.com
Dash Cinnamon, found at Vitacost.com
Dash Vanilla, found at Vitacost.com

     Blend all together in Magic Bullet.  Set in fridge to chill and thicken.  This makes 1 1/2 cups, each Tablespoon has 17 calories, 1.3g net carbs, 2g protein.  Enjoy  ;)  PS  THIS IS GOOD !!!!
