Cherry Pecan Pancakes







     I remember when I was a kid that I thought Cherry Pecan Ice Cream was an intolerable thought ... but then as an adult I decided to try it!  Guess what, it's good!  :0  So I had some dried cherries on hand and thought I would make a fun stack of pancakes and dot them with a little sweet fruit!  It gets even better at 285 calories, 15.2g net carbs and 42.2g protein.  Where else are you going to find those stats!?  Breakfast can't get here fast enough!!!  ;)

Ingredients~
5.3oz Dannon Greek Light&Fit Cherry Yogurt, divided in half
2 Pecan Halves, crumbled
1 scoop Quest Vanilla Milkshake Protein Powder
1/4 cup Egg Whites
1 teaspoon Cinnamon Roll Coconutter, melted
1 teaspoon Baking Powder
Dash Salt
Dash Cinnamon
Dash Almond Extract
Whipped Topping for garnish, if desired

     Chop each of the 5 dried Cherries into very small bits, keeping each Cherries separated.  Blend 1/2 yogurt, Protein Powder, Egg Whites, Coconutter,  Baking Powder, Salt, Cinnamon, and Almond.  Drop batter by a 1/4 cup onto Pam sprayed skillet, sprinkle each pancake with Cherry bits, slightly press down into batter then flip pancake to bake other side til golden brown.  Repeat 2 more times or till batter used.  When ready to eat, frost each pancake with remaining Yogurt and sprinkle top with remaining Cherry bits and crumbled Pecans.  Finish with Whipped Topping if desired.  Enjoy  ;)
