Turtle Brownie Sundae








     Every once in a while all the stars in the universe line up and luck falls your way !!!  I dreamed about melting caramel, gooey chocolate, and cascading vanilla ice cream all night and ended up with this Turtle Brownie Sundae recipe!!!  I hoped out of bed this morning and got my Caramel on ...  using a Double Chocolate Chunk Quest Bar, protein Vanilla Ice Cream, Pecans and Chocolate Chips I knew I could create a masterful healthy snack/dessert all in one !!! AND, each Turtle Brownie Sundae is only 244.3 calories, 6.3g net carbs and 25.6gprotein ~ ... and btw, we all know who wins the race between the Turtle and the Hare ...  #WINNINGFIRSTPLACE  ;)

Ingredients for Ice Cream~
1/2 cup Half N Half
1/2 cup Almond or Cashew Milk( I try and use the 25-30 cal/cup)
1 Tablespoon Swerve Confectioners Erythritol
1 scoop Quest Vanilla Milkshake Protein Powder
Dash Cinnamon
Dash Vanilla

     Mix all together in large mixing bowl and blend on high with hand mixer til thickened and frothy for several minutes.  Pour into 9X13 pan and place in freezer for a couple hours. Remove and let soften on counter as needed to get to "scoopable" consistency.  I divided the recipe into 6, each portion is 44 calories, .75g carbs and 4.7g protein.

Ingredients for Caramel~
4 Medjool Dates~ soaked in water for 30 minutes,drain and remove pit 
2 Tablespoons Reduced Fat Shredded Coconut
2 Tablespoons chopped Cashews
1/4 cup Half n Half
2 Tablespoons Walden Farms Caramel Syrup
1 Tablespoon Swerve Confectioners Erythritol

     Blend all ingredients in Magic Bullet til smooth as possible.  Should yield about 3/4 cup, store in refrigerator.  I used one teaspoon for this recipe at 13 calories, 2g carbs and .2g protein.

Ingredients for Brownie~
2  Quest Double Chocolate Chunk Quest Bars, diced
2 Tablespoons Half N Half
1 Tablespoon Swerve Granular Erythritol
1 Pecan Half, broken into pieces, for topping
3 Lily's Stevia Sweetened Chocolate Chips, for garnish

      Mix first 3 ingredients together in bowl and microwave for 25 seconds, stir til almost smooth~I left mine a little lumpy to enjoy the chunks in the Brownie.  Pour in 2 Pam sprayed ramekins  and bake at 350 for 5 minutes.  Remove and cool slightly, place one serving on each of the two plates. Top with 1/6 of the Ice Cream,1 teaspoon of the Caramel, 1 Pecan Half broken into pieces, and finish with 3 Lily's Stevia Sweetened Chocolate Chips for garnish, if desired.  Enjoy the heck outta this!!!  Hello Heaven !!!
