Chicken Ceasar Salad Wrap





     This is GOOD!!!  The flavor, the texture, the melt in your mouth experience all rolled into one!  Start your Chicken Ceasar Salad Wrap with a good homemade Dressing and you will thank yourself!  (I even grated my own Parmesan Cheese)  Marinating your Chicken in your Dressing over night is my big secret to tender pieces of juicy strips of wonderful poultry.  Put this on your dinner menu as soon as possible!  :)

Ingredients for 4 wraps~
1 pound boneless skinless Chicken Tenderloin
Ceasar Salad Dressing (enough to cover Chicken plus more for garnish), see recipe below
1 Tablespoon EVOO
1 large Yellow Onion, diced
1 Tablespoon chopped jarred Garlic
Dash Cayenne
Low Carb La Tortilla Factory White Flour Tortilla's (or your preferred brand)
Chopped Romaine
Sliced Avocado
Sliced Roma Tomato
Shredded Parmesan

     Stab your Chicken Tenders several times with fork or knife and put in zip lock baggie with enough Dressing to coat Chicken and marinate overnight.  Heat EVOO in skillet and add chopped Onions, Garlic and Cayenne til golden brown, then add Chicken Strips and discard marinade til Chicken cooked thru.  Add mixture equally to each of the Tortillas, top with Romaine, Avocado, Tomato, Parmesan and top with Dressing, roll up and enjoy with your favorite fruit or veggies!

Ingredients for 2.5 cups of Ceasar Dressing~
Jumbo Egg
1 cup Extra Virgin Olive Oil
1/2 cup shredded Parmigiano Reggiano
1 Tablespoon chopped jarred Garlic
1/2 cup Lemon Juice
2 Tablespoons Stone Ground Mustard
1 teaspoon Salt
1 teaspoon Pepper
1 Tablespoon Anchovy Paste

     Mix all together in Magic Bullet til fully blended, store in glass jar in fridge.  For 2 Tablespoons it is 113 calories, .3g carbs, and 1.4g protein.
