Chocolate Chunk Zucchini Carrot Bread

     You can't judge a book by its cover!  This Chocolate Chunk Zucchini Carrot Bread may not be the Queen of the Prom but I guarantee this beauty will live happily ever after in the world of yumminess!!!  Even better is the award winning stats that each of the 8 slices is only 131 calories, 5.4g net carbs and 9.6g protein.  You don't have to be a Rhodes Scholar to do the math on this one!  ;)

Ingredients for 8 slices~
10oz grated Zucchini, grated into hand towel and squeeze excess liquid til moisture removed
2 Tablespoon Vanilla Cupcake Sweet Spreads, melted
1 Jumbo Egg
1 cup 25 cal/cup Silk Cashew Milk
1 scoop Quest Salted Caramel Protein Powder or Vanilla Milkshake Protein Powder
6oz shredded Carrots
1/3 cup Nutiva Coconut Flour
1/3 cup Swerve Granular Erythritol
1 teaspoon Baking Powder
1/2 teaspoon Salt
Dash Cinnamon
Dash Vanilla
1 Quest Double Chocolate Chunk or Banana Nut Muffin, chopped into bits
1 Tablespoon chopped Walnuts
1 Tablespoon gourmet roasted Pumpkin SuperSeedz

     After squeezing all the excess moisture out of the shredded Zucchini, add to melted Vanilla Cupcake Sweet Spreads, Egg, Cashew Milk, Quest Protein Powder, shredded Carrots, Coconut Flour, Granular Erythritol, Baking Powder, Salt, Cinnamon and Vanilla, then pour into parchment lined loaf pan.  Top with diced Quest Bar, Walnuts and Pumpkin Seeds.  Bake at 375 for 50 minutes.  Remove and cool til ready to slice!  Enjoy  ;)
