Lemon Coconut Cashew Fudge
You might think this is the weirdest flavor combination eva, and I would have to agree...HOWEVER, this turned out to be one of the best creations I have ever experienced. My taste buds were doing back flips with every bite! And, each of the 8 decadent servings are only 198 calories, 7g net carbs and 11g protein. Experiment for yourself and see if you are into weird as much as I am! :)
Ingredients for 8 servings~
3/4 cup Cashew Butter or other nut butter
3/4 cup + 1 Tablespoon reduced fat Lets Do Organic Coconut Shreds
1 scoop Quest Salted Caramel Protein Powder
1/3 cup Swerve Confectioners Erythritol
1/3 cup Lemon Juice
2 Tablespoons Betterbody Foods Coconut Flour
1 teaspoon Lemon Zest
1 Tablespoon Lily's Stevia Sweetened Chocolate Chips
Lemon Curls for garnish as desired
Mix all together except for 1 Tablespoon Coconut, Chocolate Chips and Lemon Curls and pat into parchment lined loaf pan. Top with remaining Coconut Shreds, Chocolate Chips and Lemon Curls. Chill over night or for several hours. Remove and slice into 8 equal pieces. Enjoy :)
