Butter Cream Turtles









     Butter Cream Turtles are a little bit of work...as the kids say these days, in "full transparency" it's gunna take a minute to whip these together.  But, if you are up for a fun craft project, it is worth the effort.  Each of these 12 Turtles are 128 calories, 13.6g carbs, 1g fiber, 11g sugar alcohol, 1.6g net carbs, .8g protein and 13g fat.  These are VERY rich, only one will do ya.  Definitely on the must try list!  ;)

Ingredients for 12 Turtles~
1/4 cup Butter (I prefer Salted Butter)
1/2 cup Lakanto Confectioners Monk Fruit~use code Paige20 for discount at checkout
1/2 cup Heavy Whipping Cream
1 teaspoon Vanilla
1/2 teaspoon Salt

48 Salted Roasted Pecans (sub with regular Pecans)

1/4 cup Lily's Stevia Sweetened Dark Chocolate Chips
2 Tablespoons Heavy Whipping Cream

     Add Butter to small saucepan and simmer on low for about 5 minutes til golden brown, stirring occasionally.  Add remaining first set of ingredients and continue to simmer another 25 minutes, stirring frequently.  Pour into 5X7 (or similar in size) glass container and chill in fridge til solid.  Arrange 12 sets of 4 Pecans in X pattern on parchment or wax lined cookie sheet.  Remove Butter Cream from fridge and cut into 12 equal pieces (if still too hard, wait a little longer til softer), remove each square individually and roll into ball and then press on top of each Pecan X, repeat with each one, and return to fridge to harden in new shape.  Meanwhile, add last set of ingredients to bowl and heat in microwave for 15 seconds, stir til fully combined, repeat for 10 seconds if necessary.  Add one teaspoon of mixture to top of each Turtle, work quickly as this Chocolate hardens quickly.  Store in fridge.  Enjoy  :)
