Creamy Tomato Soup






     When the hubby says you can make this 3-4 times a week, you realize you have a hit on your hands...  My Creamy Tomato Soup was a perfect creation on a cold winter weekend in Kansas, although great any time of year.  This just really hits the spot.  Each of these 8, 1 cup servings are only 160 calories, 7g carbs, 1g fiber, 6g net carbs, 1g protein and 13.5g fat.  Seriously consider my spouses high praise and give this one a try for yourself!  PS these pair beautifully with my Salt and Pepper Crackers~https://foodfitnessbypaige.blogspot.com/2019/01/salt-and-pepper-crackers.html

Ingredients for 8 one cup servings~
1 Tablespoon Olive Oil
1/2 diced Onion
1 Tablespoon chopped Garlic
Dash Cayenne Pepper
4 cups Chicken Broth
1 15oz can crushed Tomato's
1 cup Whipping Cream
1 Tablespoon Sugar
2 Tablespoons Butter
Salt, to taste
Pepper, to taste
Parmesan, as garnish if desired (not included in macros)
Parsley, as garnish if desired (not included in macros)

     Heat Oil in skillet, add Onions, Garlic and Cayenne til golden brown.  Add Broth and Tomatoes, simmer for 45 minutes, stirring occasionally.  Remove and add to blender til smooth, might need to do in batches, only fill half way with warm liquid (I used my Magic Bullet in 3 batches).  Return to pot, stir in Cream, Sugar and Butter til fully incorporated.  Season as desired.  Enjoy  :)  PS  pairs beautifully with my Salt and Pepper Crackers.
