Chicken Cheddar Cauliflower Casserole
I know time is tight for so many people, so making things quick is always a plus. I was able to throw this dish together in no time flat, and you can not tell this was not a labor intensive work of love. And the macros are astounding, a FOURTH of this 9X13 is only 400 calories, 11.8g carbs, 9.7g fiber, 2.1g net carbs, 35g protein and 26g fat. Add a side green salad with a Tablespoon dressing or, my famous Green Beans, and you can enjoy a hearty meal for about 500 calories. Dinner never looked so good! ps you can only pray for leftovers!
Ingredients for 4 servings~
1/4 cup Sour Cream
4oz Cream Cheese, softened to room temperature
1 Tablespoon Ranch Seasoning
4 slices Turkey Bacon, cooked and crumbled
1 pound Rotisserie Chicken meat, pulled from bone and chopped
1 large head Cauliflower, steamed
1 Red Bell Pepper, chopped
2oz/1/2 cup shredded Cheddar Cheese
2 Green Onions, diced

Mix together Sour Cream, Cream Cheese and Ranch til fully incorporated, set aside. Cook and crumble Turkey Bacon, set aside. (I do mine in the microwave one slice at a time for one minute on a paper towel) Pluck Chicken, and add to large mixing bowl (I find the best deals at Costco). Chop Cauliflower into small florets and add to bowl with a tablespoon water and microwave on vegetable/steam setting per your oven. Meanwhile, stir in Sour Cream mixture and Bacon with Chicken, along with 3/4 of Bell Pepper, drain Cauliflower and blend that in with rest of mixture and pour into greased 9X13 and bake at 375 for 20 minutes, remove and top with Cheese, remaining Bell Pepper and Green Onions, return to oven for 10 more minutes. Enjoy :)
