One Pot Walnut Wild Rice with Brussels and Chicken







     I don't care what you say, but when you can cook dinner in one pot life gets a whole lot sweeter.  Welcome to my One Pot Walnut Wild Rice with Brussels and Chicken.  This is actually one of the best rice dishes I have ever eaten, and I have two family members to back up my claim!  I REALLY hope you will give this a whirl.  For an 8th of the recipe, which constitutes 1/2 cup rice mixture and 4oz Chicken, it is 306 calories, 25.8g net carbs and 22.9g protein.  Can't wait to hear what you think when you try it  ;)

Ingredients for 8~
1/4 cup chopped Walnuts
1 Tablespoon EVOO
Medium Yellow Onion, diced
Tablespoon chopped jarred Garlic
Dash Cayenne Pepper
Dash Salt
2 pounds boneless skinless Chicken Thighs
1 cup Wild Rice
1 cup shredded Carrots
1 bunch of diced Celery
2 cups Water
2 teaspoons Chicken Base or 2 cubes Chicken Bouillon
1 pound Brussels Sprouts, cleaned and cut in half
1oz Chopped Dried Dates

     Add Walnuts to skillet and heat for 4-5 minutes til beginning to toast, making sure not to burn.  Keep an eye on nuts as they can burn quickly, remove and set aside.  Add EVOO to skillet along with Onion, Garlic, Cayenne, and Salt til golden brown.  Then add Chicken and brown on all sides 3-4 minutes each, remove,plate, and set in fridge til ready for use.  Meanwhile, add Rice, Carrots, and Celery to pan and swirl around til completely coated with Onion mixture.  Add Water and Chicken Base/Bouillon bringing to boil, cover and reduce heat to simmer for 45 minutes.  Then add Chicken back to pan along with Brussels, cover and simmer another 15 minutes, or til Chicken done and Brussels softened.  Top with Walnuts and Dates.  Enjoy  ;)
