Sweet Nanner Nutter Crockpot Cake






     Who of you has EVER cooked a cake in a crockpot!?  Not me, ... til today!!!  It turned out great and was so easy, also it's fun to do something a little creative and out of the box...err... oven.  My Sweet Nanner Nutter Crockpot Cake was one of those recipes that you literally start throwing ingredients in the bowl and the results be what they may.  I was so happy with the outcome and now want to experiment with a few other flavors.  It was astonishing how moist and dense the texture was, and even more surprising that an eighth of the cake with ice cream and sauce was only 252 calories, 13g net carbs and 13g protein.  (Another big bonus is that you can put the cake in the crockpot on a Sunday morning, head off to church, come home to family dinner and it will be ready and waiting for an afternoon treat)

Ingredients~
3oz Banana
5.5oz baked, cooled, and peeled Sweet Potato
3 Jumbo Eggs
3/4 cup Swerve Granular Erythritol
1/3 cup Vanilla Cupcake Sweet Mama Mels Coconutter (use code Paige15 for 15% discount~can sub with any Nut Butter)
1 scoop Vanilla Milkshake Quest Protein Powder
1/2 cup Coconut Flour
1/2 cup 25 cal/cup Cashew Milk + 1 teaspoon Vinegar = Cashew Buttermilk
5.3oz Dannon Light&Fit Greek Vanilla Yogurt
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla Extract
Dash Almond Extract

1 Tablespoons Lily's Stevia Sweetened Dark Chocolate Chips
1 Tablespoon Walden Farms Chocolate Syrup, per slice (sub with Almond Milk)

1/4 cup Vanilla Halo Top Ice Cream, per slice

     Add all the batter ingredients in first section to bowl and beat with mixer til smooth.  Pour batter into Pam sprayed Parchment lined crockpot for four hours on low, or til center is set.  Cool and lift cake by grasping sides of Parchment Paper ( don't forget to spray Parchment Paper with Pam).  While cooling, mix Chocolate Chips and Chocolate Syrup and microwave for 15 seconds, stir and let cool and thicken.  When ready to serve, slice an eighth cake, drizzle with Chocolate Sauce and top with 1/4 cup Vanilla Halo Top Ice Cream.  Enjoy  :)

  1. hi... i dont have quest vanilla protein milkshake, but i do have chocolate milkshake and multi-purpose can i replace vanilla flavor for one of those? and also dont have cashew milk, can i use almond milk? thanks!!

  2. Maria, so sorry I am just seeing this! I would recommend the chocolate over the multi purpose, and almond milk is great! I feel like it's your kitchen and feel free to explore with all kinds of combinations! Let me know how it turns out :)
