Sweet Cinnamon Roll Bread
Having a slice of Sweet Cinnamon Roll Bread for breakfast is the perfect start to your day! Actually it's an awesome treat mid-morning, noon, mid-afternoon, dinner, and after dinner ... are you getting the picture here!? And it's healthy as an added bonus! An 8th of the loaf is only 190 calories, 8g net carbs, and 11.3g protein. This Bread is so moist and dense you will not even need to add any "buttah",... it's that melt in your mouth delicious with every bite ... I challenge you to eat just one piece! ;)
Ingredients~
1 Quest Cinnamon Roll Bar
1/4 cup Sweet Spreads Cinnamon Roll Coconutter, melted, plus 1 Tablespoon for topping
1 small Banana, mashed ( about 2.5oz)
4oz baked, cooled, skinned Sweet Potato, mashed
2 Jumbo Eggs
Dannon Greek Light&Fit Vanilla Yogurt
2/3 cup Swerve Granular Erythritol
1/4 cup Nutiva Coconut Flour
1 scoop Quest Vanilla Milkshake Protein Powder
1 teaspoon Baking Powder
Heavy Dash Cinnamon
Dash Vanilla

Microwave Cinnamon Roll Quest Bar for 12 seconds, and pat into thin rectangle on Silpat lined cookie sheet, bake at 350 for 5 minutes, cool and crumble into Magic Bullet, grind to powder. Meanwhile melt 1 Tablespoon Cinnamon Roll Coconutter and stir into Cinnamon Roll powder, set aside. Add remaining ingredients, except Protein Crunchies, in bowl and mix til thoroughly blended, then gently hand stir in Protein Crunchies and pour batter into Parchment lined loaf pan. Top with Cinnamon Roll mixture and pat down slightly. Bake at 350 for 45 minutes, or til center is set but not over done. Remove and cool, store left oversin fridge. Enjoy :)
