Keto Cinnamon Roll Cake

     I coerced the Hubs into trying Keto with me...unfortunately sometimes coercion is a precursor to complaining....  It wasn't too long before my better half started longing for his beloved Cinnamon Rolls.  In my attempt to be "The Good Wife", I searched for ideas to sooth his aching heart...and belly.  So, this recipe has been adapted from mincerepublic.com, follow Mince Republic for many other fab keto ideas.  My version has 640 calories, 26.5g carbs, 4.5g fiber, 20g sugar alcohol, 2g net carbs, 15g protein and 59.5g fat.  Now, obviously this is hefty enough to share...at least some portion...even if sharing is with yourself later on....  #choices

Ingredients for one...or two servings~
1 Tablespoon Butter, melted
2 Tablespoons Almond Flour
2 Tablespoons ground Flax Seed
1 Extra Large Egg

1 teaspoon Baking Powder
Heavy dash Cinnamon

1.5 Tablespoons Butter, melted
2 teaspoons Lakanto Monk Fruit Confectioners, sub with Classic~use code Paige20 for discount at checkout
Dash Cinnamon

1oz/2 Tablespoons Cream Cheese, softened to room temperature
1 Tablespoon Heavy Whipping Cream

     Coat 2 cup Rubbermaid tupperware container with cooking spray.  Mix first set of ingredient and pour into prepared container.  Meanwhile, mix second set of ingredients, and pour half on top of Cinnamon Roll batter, cut into batter with knife in a swirl pattern, microwave for one minute, turn upside down on plate and pour remaining glaze over top.  Lastly, mix third set of ingredients til well blended, spread on top of Cinnamon Roll.  Garnish with Cinnamon if desired.  Enjoy  :)
