Keto Eggplant Lasagna








     No need for noodles when Eggplants are in stock.  Nothing will stop a low carb lifestyle, nuthin'...there's literally a recipe for everything.  Eight giant servings are only 510 calories, 8.9g carbs, 1.8g fiber, 7.1g net carbs, 35.5g protein and 37g fat.  Serve with a mixed green salad and a Tablespoon of Ranch for a well balanced meal.  AND, if you prefer a smaller serving size, GFI (...go for it).

Ingredients for 8 large servings~
1 Eggplant, approximately 1-1 1/4 pound
2 Tablespoons Olive Oil
Dash Salt
Dash Pepper
Dash Garlic Powder
8oz Kerrygold Cheese, sub with grated Parmesan Note~I buy solid Cheese and grate my own, much much better
1 pound Ricotta
2 Extra Large Eggs
1/4 cup fresh Parsley, diced~extra for garnish
1 pound cooked and drained 90% ground Beef
1 jar 24oz Rao's Marinara Spaghetti Sauce
8oz grated Mozzarella

     Trim Eggplant and slice into 12 equal pieces, rub with Oil, season as desired, bake at 425 for 20 minutes on parchment lined cookie sheets.  Meanwhile, grate Cheese and stir together with Ricotta, Eggs and Parsley. In another bowl, stir together Beef and Sauce.  Line a cake pan with parchment paper, add 1/3 Sauce to bottom, top with half Cheese mixture and half Eggplant, repeat and finish with remaining 1/3 Sauce, top with Mozzarella.  Cover with foil and bake at 400 for 40 minutes, uncover and bake another 10 minutes til Cheese is melted.  Enjoy  :)
