Chocolate Cupcakes








     Chocolate on chocolate on chocolate... problem with that!? ... didn't think so...  But seriously, doesn't your mouth just salivate looking at that tall creamy frosting!?  (I've been known to eat the lids off cupcakes and throw the bottoms in the trash...not encouraging, just sharing...calorie saving tips)  I digress, my Chocolate Cupcakes turned out simply amazing and Gluten Free.  Each of the 9 rich treats are only 180 calories, 5.7g net carbs and 13.7g protein, for one cupcake and 3 Tablespoons frosting.  These are so macro friendly that eating the whole thing is a guilt free dream come true!  So long past bad habits!  :)

Ingredients for 9 frosted Cupcakes~
2 Tablespoons Betterbody Foods Coconut Oil, melted
1/2 cup Brownie Batter G Butter (sub with 4.5 Tablespoons Nut Butter)
2 large Eggs
1 scoop Quest Chocolate Milkshake Protein Powder
1/3 cup Swerve Confectioners or Granular Erythritol
1/4 cup Cocoa
2 Tablespoons Betterbody Foods Coconut Flour
1 teaspoon Baking Powder
Dash Cinnamon
Dash Betterbody Foods Vanilla

4oz reduced fat Cream Cheese, softened
7oz 2% Fage Greek Yogurt
1/2 Swerve Confectioners Erythritol
1/4 cup Cocoa
2 Tablespoons Brownie Batter G Butter (sub with one Tablespoon melted Coconut Oil)

     Mix first set of ingredients til well blended, pour equally into 9 silpat lined cupcake tins.  Bake at 350 for 15-17 minutes or til starting to crown, do not over bake as protein powder baking products can dry out easily and will continue to bake even after removed from oven.  Meanwhile, mix second set of ingredients thoroughly and chill til ready to use.  Once cupcakes have cooled, frost each cupcake with 3 Tablespoons frosting.  Garnish with Chocolate curls by forking Chocolate Square.  Enjoy  :)
