Coconut Flour Butter Cookies

     Shout out to all my keto lovin' followers, I am going to be your new best friend!  Would you believe me if I told you these wonders were only one net carb!?  Shocking, right!?  In fact, each of these melt in your mouth Coconut Flour Butter Cookies are only 73 calories, 4g protein and 5.5g fat.  Not bad, huh!?  These turned out amazing and I am immensely proud!

Ingredients for 16 cookies~
1/4 cup/4 Tablespoon Butter, softened to room temperature
1 jumbo Egg, room temperature
2 scoops unflavored Vital Protein Collagen Peptides
1/4 cup Almond Flour
1/4 cup Coconut Flour
1/3 cup Lakanto Monk Fruit~use code Paige20 at checkout
1 teaspoon Baking Powder
1/4 teaspoon Lite Salt
Dash Butter Extract

2 Tablespoons Butter, softened to room temperature
3 scoops unflavored Vital Protein Collagen Peptides
1/3 cup Lakanto Powdered Monk Fruit~use code Paige20 at checkout
Dash Butter Extract
2-3 teaspoons Milk, for desired consistency
Drop of Food Coloring of choice, for desired color

Sprinkles, for garnish if desired, not included in macros

     Mix first set of ingredients til thoroughly combined, should yield one cup.  Drop by the Tablespoon onto silpat lined cookie sheet, forming gently pressed 2-2 1/2 inch circles.  Bake at 350 for 12 minutes.  Meanwhile, mix second set of ingredients til well incorporated, frost with one teaspoon frosting on cooled cookies.  Garnish immediately with Sprinkles if desired, icing is very sticky and dries fast.  Enjoy  :)


  1. Just a suggestion,there are a few brands of natural food coloring now that work well. This way your not adding cancer causing regular dyes. I believe whole foods carries some and I saw some at Sprouts my last trip.

  2. is there any substitute for the vital collagen protein?

    1. I would suggest another protein powder, but they bake more dry. The collagen Peptides seems to add moisture to baked goods. But, as I always say, it doesn’t hurt to try and make it your own Picasso! Let me know how it turns out! Thanks for the question 😊
