Fathers Day Cupcakes








     Happy Fathers Day to all those great dads out there.  We love to celebrate by showing our affection with food!  And we should...as long we make good choices, because true love starts with health.  Case in point, my Fathers Day Cupcakes can be consumed guilt free, grain free, sugar free and fiber filled!  Each of the 10 cupcakes are only 163 calories, 16.8g carbs, 1.9g fiber, 12.8g sugar alcohol, 2.1g net carbs, 3.6g protein, and 15g fat for one frosted cupcake.  Engage the troops and have the kids decorate to their hearts desire, use my simple fishing or baseball ideas, or something more personal.  #funinthekitchen  Enjoy this list of all my Fathers Day recipes~https://foodfitnessbypaige.blogspot.com/2018/05/happy-fathers-day.html

Ingredients for 10 Cupcakes~
4 Tablespoons Butter, room temperature
1/3 cup Lakanto Monk Fruit~use code Paige20 at checkout for discount
1 Extra Large Egg, room temperature
1 cup Almond Flour
3.5oz or 1 cup freshly grated Carrots (don't cut corners on this step, very important, I used large grate)
4oz or 1/2 cup unsweetened Applesauce ( I grind my own in the Magic Bullet or blender)
1 teaspoon Baking Powder
1/4 teaspoon Salt
Dash Vanilla
Dash Cinnamon
Dash Ginger (optional)
Dash Nutmeg (optional)

2 Tablespoons Butter, room temperature
2oz or 1/4 cup Cream Cheese, room temperature
1/3 cup Lakanto Powdered Monk Fruit~use code Paige20 at checkout

Food Coloring, as desired
Pretzels, as desired
Gold Fish, as desired

       Add Butter and Monk Fruit to bowl, beat til fluffy, add in Egg til well blended, then continue on with remaining ingredients til well blended, drop by 1/4 cup in silpat lined muffin tin, or find a fun Fathers Day liner, and bake at 375 for 25 minutes.  For Frosting, add Butter to bowl along with Cream Cheese, beat til well incorporated, then blend in Monk Fruit.  Frost and decorate Cupcakes as desired.  Enjoy  :)
