Barbecue Chicken Avocado Salad







     Lunch never tasted so good, or looked so inviting.  This is the perfect combination of sweet savory lusciousness.  This hearty salad will stick to your ribs from noon til bedtime.  You decide if it is for one, or to be shared.  This entire dish is 590 calories, 16g carbs, 8.7g fiber, 7.3g net carbs, 61g protein and 34.2g fat.  I think I could eat this every single day...or in all seriousness,  at least once a week!  #simplydivine

Ingredients for one large or two medium Salads~
2 slices center cut Bacon~I use Oscar Myer
1/2 pound/8oz diced Chicken Breast
Seasoning as desired~I used a Garlic blend
2 Tablespoons G Hughes Sugar Free Barbecue Sauce (found at Walmart)
2 cups mixed Greens
1 small diced Avocado
1 dill Pickle Spear, diced
1/4 cup/1oz shredded Cheddar Cheese (sub with favorite)

     Fry Bacon til desired level of crispy, remove Bacon, crumble and set aside.  Add diced Chicken to Bacon drippings and cook thoroughly, drain juices and discard, stir in Bacon Crumbles and Barbecue Sauce til well combined.  Arrange Greens in bowl, add Avocado and Pickles around perimeter, add Chicken mixture to center, sprinkle with Cheese, season as desired.  Enjoy  :)
