Fried Queso Fresco Salad






     Freshness at its best Fresco style!  Looking for a hearty lunch or dinner, or even a meal for two...whelp stay tuned for this one, you won't want to miss it!  This plate of deliciousness will cost you 630 calories, 3g carbs, 2g fiber, 1g net carb, 62g protein and 39g fat.  Feel free to share, or enjoy every last loving bite solo!

Ingredients for one or two servings~
6oz Chicken Breast, diced
Seasoning as desired~such as, Salt, Pepper, Garlic Powder
4oz Queso Fresco, sliced into 6 slices
1 Tablespoon Butter
1 teaspoon-1 Tablespoon Lemon Juice or Apple Cider Vinegar, according to taste
Two cups Green Leafy Vegetables~such as Spinach, Kale, Romain
Diced Tomato, if desired for garnish (not included in macros)

     Add diced Chicken to small skillet, season as desired and heat til cooked through.  Meanwhile, slice Cheese into 6 equal pieces, set aside.  Melt Butter in another small skillet, when hot add sliced Cheese til brown on one side, flip and brown on other side, may need to flip a couple of times if necessary.  Add Greens to salad plate, top with fried Cheese around perimeter of Greens.  Pour diced Chicken along with juices into remnants of Cheese skillet, mixing with remaining Butter in skillet and toss to coat.  Add Lemon or Apple Cider Vinegar to mixture, according to taste.  After well blended, pour into center of salad plate.  Garnish with diced Tomato if desired, season according to taste.  Enjoy  :)
