Vanilla Peanut Butter Pork Rinds




     Recently we had a very nice well meaning lady bring peanut butter marshmallow corn flake cookies into the office...little did she know half of us don't eat sugar typically.  But they looked so good it literally made my mouth water.  So, what's a girl to do but strive for a similar guilt free alternative.  Hence, my Vanilla Peanut Butter Pork Rinds were born and they turned out FANTASTIC!  The entire serving was only 272 calories, 17g carbs, 14.5g fiber, 2.5g net carbs, 22.5g protein and 13g fat.  All the sweet savory crunch without any of the regret!

Ingredients for one serving~
1 Tablespoon no added sugar Peanut Butter
1 Tablespoon Choczero Vanilla Syrup
1oz Carolina Microwave Pork Rinds (I found mine on Amazon~these are AMAZING, very light and crispy, zero carbs)
Salt, to taste

     Stir together Peanut Butter and Syrup til smooth.  Meanwhile, lay Pork Rind on paper towel and microwave 2 minutes or per bag instructions, sprinkle lightly with Salt.  Dip Pork Rinds into Peanut Butter mixture.  Enjoy  :)
