Smarty Pants Salad
Recently, a local retirement village asked me to present a seminar on brain fit food. With that in mind, this recipe was created specifically for my new friends at Larksfield Place. We've discovered foods that increase or maintain your cognitive development and here are 6 of them: Salmon, Eggs, Spinach, Walnuts, Blueberries and Avocados. So why not develop a Salad to host 5 of those players for a super charged meal. Each Salad is only 496 calories, 15.1g carbs, 7.5g fiber, 7.6g net carbs, 33.8g protein and 33.6g fat. Popeye would be so proud!
Ingredients for one Salad~
2 cups Baby Spinach Leaves
4oz Baked Salmon (bake at 425 for 20 minutes)
1/4 cup Blueberries
2 large Strawberries, sliced
1/2 small Avocado, sliced (approx 1.75oz)
1oz/scant 1/4 cup crumbled Goat or Feta Cheese
1 Tablespoon crumbled Walnuts
Salt, to taste
Pepper, to taste
1 Tablespoon Balsamic Syrup or Vinegar~optional and not included in macros, this Salad really doesn't need a Dressing, feel free to just enjoy all the natural flavors.
Add Spinach to bowl, top with ingredients and enjoy to the fullest. You might even be smarter when you are finished! ;)
