Walnut Chocolate Chips









     Can you imagine a life where you eat cookies every day!?  Well I can and I do!  I make room every afternoon for a favorite dessert, guilt free.  Today my pleasure was my Walnut Chocolate Chips.  Each of the 8 servings (4 cookies/50gms) are only 201 calories, 13.5g carbs, 3.8g fiber, 7.5g sugar alcohol, 2.2g net carbs, 5g protein and 18.4g fat.  I bag these up into servings and save them in the freezer to pull out when the hankering strikes.  It's a perfect system, try it out and see if it might work for you too!

Ingredients for 8 servings (4 cookies/50gms)~
4 Tablespoons Butter, room temperature
1/4 cup Lakanto Monk Fruit~use code Paige20 at checkout for discount
1 Extra Large Egg, room temperature
1 cup Almond Flour
1 teaspoon Baking Powder
Dash Cinnamon
Dash Salt
Dash Vanilla
1 Tablespoon Lily's Stevia Sweetened Dark Chocolate Chips
1/4 cup chopped Walnuts (30gms)

     Blend together Butter and Monk Fruit til fully combined, beat in Egg, then add Flour, Powder, Cinnamon, Salt, and Vanilla til well incorporated.  Then stir in by hand the Chips and Walnuts.  Either visually or with a food scale, break dough into 8 equal parts, 50 gms each.  Then break each portion into 4 equal cookies, about a scant Tablespoon or 2 teaspoons.  Lay on Silpat lined cookie sheet and bake at 350 for 8 minutes, or desired level of done.  Enjoy  :)
