Pumpkin Pecan Pancake Fritters







     This entire melt in your mouth recipe is only 470 calories, 27g net carbs and 16.6g protein.  So you can choose to share or not to share... that is the question!  Pumpkin Pecan Pancake Fritters for days ...it's the stuff dreams are made of!  ;)

Ingredients~
1/4 cup Bob's Red Mill Almond Flour
1/4 cup Pumpkin
1 jumbo Egg
1/4 cup reduced fat Let's Do Organic Unsweetened Coconut Shreds
1 Tablespoon Betterbody Foods Agave
1 teaspoon Baking Powder
Dash Pumpkin Pie Spice (can sub with Cinnamon)
Dash Betterbody Foods Vanilla
3 Pecan halves, chopped
36 Lily's Stevia Sweetened Chocolate Chips
Walden Farms Pancake Syrup, optional

     Stir together all ingredients except for Pecans, Chocolate Chips and Syrup.  Heat skillet and spray with Pam or Coconut Oil Spray and add batter in 4 equal portions to skillet til cooked, flip and cook other side.  Pancakes will be thin as they are more of a Fritter than a fluffy cake.  Sprinkle with Pecan pieces and Chocolate Chips, top with calorie free Syrup if desired... then devour with abandon!  Enjoy  :)
