Chewy Chocolate Chunk Cookies

     It only took me three tries to get this cookie right...I get points for sticktoitivness, right!?  (that's what my dad always told me was the key to success...if you try this recipe you will see for yourself that he was right with a lifetime of reminders, thanks dad...)  Each of these 25 perfect cookies are only 55 calories, 7g carbs, 5g fiber, 2g net carbs, 3g protein, and 4g fat.  These are super for grab and go mini meals, I take a baggie of 6 for post work out fueling.  How could that be bad everyday!?  So much goodness!

Ingredients for 25 cookies~
2 Tablespoons Butter, softened to room temperature
1/2 cup Lakanto Golden Monkfruit~use code Paige20 at checkout
2 Extra Large Eggs
1/2 cup super fine Almond Flour
1/2 cup Oats, grind to powder in Magic Bullet/Blender
1/4 cup ground Flaxseed
4 scoops unflavored Vital Proteins Collagen Peptides
1 teaspoon Baking Powder
Dash Lite Salt
Dash Cinnamon
Dash Vanilla
2oz ChocZero Sea Salt Almond Bark, chopped

     Beat Butter and Monkfruit til thoroughly whipped together, start adding in remainder of ingredients, mixing as you go.  When it comes to the Chocolate bits, stir in with spoon.  Chill dough for 2 hours, then drop by level Tablespoon onto Silpat lined cookie sheet, bake at 375 for 13 minutes.  Enjoy  :)
