Red, White and Blue Cupcakes







     It's time to celebrate, Happy Birthday 'Merica!  How do we pay homage to our country, ...cupcakes of course!  And when you find out these are only 188 calories, 21g carbs, 17g fiber, 4g net carbs, 10g protein and 15g fat, you will feel like shooting off fireworks and waving the flag!  Make this holiday a good one, and enjoy a few of these patriotic wonders!  :)

Ingredients for 9 Cupcakes and Frosting~
1/4 cup Coconut Oil, melted
1/2 cup Lakanto Monk Fruit~use code Paige20 at checkout
2 jumbo Eggs
4 scoops Vital Proteins unflavored Collagen Peptides
1/2 cup Oats, grind to powder in Magic Bullet/Blender
1/2 cup super fine Almond Flour
4oz/1/2 cup unsweetened Appplesauce
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla

4 Tablespoons Butter, softened to room temperature
4oz reduced fat Cream Cheese, softened to room temperature
4 scoops Vital Proteins unflavored Collagen Peptides
1/2 cup Lakanto Confectioners Monk Fruit~use code Paige20 at checkout
Dash Butter Extract
Dash Vanilla Extract

Food Coloring as desired

     Add first set of ingredients to bowl and beat with mixer til well incorporated.  Drop by 1/4 cup batter into Patriotic Cupcake Liners and bake at 375 for 15-25 minutes...(full disclosure, ... I forgot to set the timer and have no idea the exact time...#whoops ...just keep an eye on them and test by patting the tops, #mymethod ).  Meanwhile, beat together second set of ingredients til smooth, add food coloring as desired for Patriotic theme, and frost as desired.  The macros account for 1 Tablespoon of Frosting per cupcake.  Chill the Frosting to firm up, or room temperature for softened.  Store leftovers in fridge, recipe should yield 1 1/4 cup Frosting.  Enjoy  :)
