Apple Protein Oat Bites | High-Protein Recovery Snack, A Simple Real Food Recovery Snack


Sometimes the best recipes are not created from a long ingredient list. They come from looking at what you already have and creating something simple, nourishing, and useful.  After a workout, our bodies need quality fuel to help support recovery. Instead of reaching for a highly processed protein bar or snack, these Apple Protein Oat Bites combine simple ingredients: ground oats, eggs, protein powder, and a crisp apple.  These little bites are packed with protein, fiber, and quality carbohydrates to help replenish energy after training. They are easy to meal prep, easy to grab on the way out the door, and made with ingredients you can recognize.

Whether you enjoy them after a workout, as a quick breakfast, or a snack when you need something satisfying, this recipe proves that real food can be simple.


Apple Protein Oat Bites


Ingredients~

1 cup Oats~(¾ cup ground oat flour)

1 scoop plain protein powder (only one ingredient of Whey Protein)

1 Teaspoon Baking Powder

Dash Cinnamon

Dash Vanilla

3 large eggs

5 ounce finely chopped Cosmic Crisp Apple (sub with favorite Apple, …but Cosmic Crisps are the Apple of my eye #seewhatIdidthere)


Instructions~

Preheat oven to 350°F.

In a bowl, combine the ground oats, protein powder, baking powder, vanilla and eggs.  Stir until well combined.  Allow the batter to rest for 10–15 minutes, or longer if wish.  This gives the oats and protein powder time to absorb the moisture and helps create a better texture. Divide the batter (about an 1/4c each) evenly into 6 muffin cups or silicone muffin liners.  Sprinkle the chopped apple pieces over the top of each portion, gently pressing them slightly into the batter. Garnish with extra Cinnamon if desired.  Bake for 25-27 minutes (protein powder baking will continue to firm up after baking), or until the centers are set and a toothpick inserted comes out mostly clean.


Allow to cool before storing. These can be enjoyed immediately or stored for an easy grab-and-go snack.

Protein Cottage Cheese Bagels






     There’s something comforting about a warm, chewy bagel, especially when it’s made from real, simple ingredients that nourish your body instead of overwhelming it. These cottage cheese bagels come together in minutes, use pantry staples, and deliver that cozy, satisfying bite without any ultra‑processed ingredients. If you’re looking for a wholesome breakfast or snack that supports recovery, steadies your nervous system, and tastes amazing, this recipe is going to become a staple in your kitchen.


Ingredients for 4 Bagels~

1 cup oats, blended into fine oat flour

2 teaspoon baking powder

1 cup cottage cheese, blended until completely smooth

1 egg, beaten (for the egg wash, reserve 1 Tablespoon)

1 teaspoon lemon juice

Everything bagel seasoning

2 cups Egg Whites

4 oz Cheddar Cheese


Instructions~

Blend the oats into a fine flour.  Add to mixing bowl along with baking powder.  Blend the cottage cheese, egg~(reserving 1 Tablespoon), and lemon juice until silky and lump‑free.  Combine the cottage cheese cream and oat flour in a bowl.  Stir until a dough forms, then let it rest for 10 minutes so the oats hydrate (I took it to the next level and let it rest with a lid in the fridge for an hour to firm up).  Divide the dough into four equal portions.  With damp or oiled hands, roll each portion into a ball and poke a hole through the center to form a bagel shape.  Brush each bagel with reserved Tablespoon of beaten egg wash.  Sprinkle generously with everything bagel seasoning.  Bake at 375°F for 30 minutes, until lightly golden.  Remove and cool to touch.  Meanwhile, when ready to serve, add 1/2 cup Egg Whites in oiled skillet, season as desired while cooking omelet style, add 1oz grated Cheddar on top, fold in half, cut bagel into 2 half circles and serve with cheese omelet inside to make a breakfast sandwich.  Repeat with remaining bagels when ready.  Enjoy ;)

Ingredients:

1 large baked russet potato (about 1 pound)

Olive oil spray

6 XL eggs (reserve 1 yolk)

5.3 oz Fage 2% Plain Greek Yogurt

¾ cup old-fashioned oats

1 teaspoon baking powder

Everything Bagel Seasoning, optional


Instructions:

Preheat oven to 400°F.

Wash potato, spritz lightly with olive oil, pierce several times with a fork, wrap in foil, and bake for 90 minutes.

Remove from oven and cool until safe to handle. Peel and place potato flesh into a large mixing bowl. Discard or snack on the skin.

Mash potato until smooth.

Add eggs (reserving 1 yolk) and mix well.

Stir in Greek yogurt until fully combined.

Blend oats into flour using a blender or food processor.

Add oat flour, baking powder, and Everything Bagel Seasoning (if using) to the mixture and stir until fully incorporated.

Line a large baking sheet with parchment paper and spread mixture into a rectangle about ¼ inch thick.

Beat reserved egg yolk and brush evenly over the surface.

Bake at 400°F for 20 minutes or until set and lightly golden.

Remove from oven, add pizza sauce, vegetables, and cheese.

Return to oven and bake until cheese is melted and toppings are cooked through.

Okay, okay… before your mind goes there, let’s talk about these buns! When I shared this recipe on social media, I opened with, “Do you want to see my buns?” and then immediately followed it with, “Psych! Tricked ya!” as I revealed these beautiful golden-brown potato buns fresh from the oven.


But here’s the thing—these buns really are worth looking at. Made with simple ingredients like potato, oats, eggs, and Greek yogurt, they’re soft, satisfying, packed with protein, and surprisingly easy to make. Whether you’re looking for a healthier bread option or simply want to try something new, these buns may just change your bread game forever.


High-Protein Potato Buns

Ingredients:

1 pound potato (about 12–15 ounces is fine)

Spritz of olive oil

1 cup oats, blended into flour

4 extra-large eggs

5.3 ounces Fage 0% Greek yogurt

1 teaspoon baking powder

Dash of salt

1 egg yolk

Dash of Everything Bagel seasoning


Instructions:

Preheat oven to 350°F.

Wash and dry the potato. Lightly rub with a small amount of olive oil.

Pierce the potato several times with a knife, wrap in foil, and bake for 1½–2 hours, or until fork tender.

Allow the potato to cool until comfortable to handle. Remove the skin and place the potato in a large mixing bowl.

Mash the potato thoroughly using a potato masher.

Add the eggs, Greek yogurt, oat flour, baking powder, and salt. Mix until well combined.

Line a baking sheet with a Silpat or parchment paper.

Scoop six ½-cup portions onto the baking sheet, shaping into circles.

Brush the tops with egg yolk and sprinkle with Everything Bagel seasoning.

Bake at 350°F for 25 minutes, or until golden brown and cooked through.

Allow to cool slightly before slicing.
