Apple Protein Oat Bites | High-Protein Recovery Snack, A Simple Real Food Recovery Snack


Sometimes the best recipes are not created from a long ingredient list. They come from looking at what you already have and creating something simple, nourishing, and useful.  After a workout, our bodies need quality fuel to help support recovery. Instead of reaching for a highly processed protein bar or snack, these Apple Protein Oat Bites combine simple ingredients: ground oats, eggs, protein powder, and a crisp apple.  These little bites are packed with protein, fiber, and quality carbohydrates to help replenish energy after training. They are easy to meal prep, easy to grab on the way out the door, and made with ingredients you can recognize.

Whether you enjoy them after a workout, as a quick breakfast, or a snack when you need something satisfying, this recipe proves that real food can be simple.


Apple Protein Oat Bites


Ingredients~

1 cup Oats~(¾ cup ground oat flour)

1 scoop plain protein powder (only one ingredient of Whey Protein)

1 Teaspoon Baking Powder

Dash Cinnamon

Dash Vanilla

3 large eggs

5 ounce finely chopped Cosmic Crisp Apple (sub with favorite Apple, …but Cosmic Crisps are the Apple of my eye #seewhatIdidthere)


Instructions~

Preheat oven to 350°F.

In a bowl, combine the ground oats, protein powder, baking powder, vanilla and eggs.  Stir until well combined.  Allow the batter to rest for 10–15 minutes, or longer if wish.  This gives the oats and protein powder time to absorb the moisture and helps create a better texture. Divide the batter (about an 1/4c each) evenly into 6 muffin cups or silicone muffin liners.  Sprinkle the chopped apple pieces over the top of each portion, gently pressing them slightly into the batter. Garnish with extra Cinnamon if desired.  Bake for 25-27 minutes (protein powder baking will continue to firm up after baking), or until the centers are set and a toothpick inserted comes out mostly clean.


Allow to cool before storing. These can be enjoyed immediately or stored for an easy grab-and-go snack.

High Protein Cottage Cheese Egg Muffins 

If you’re tired of starting your day hungry, battling cravings, or relying on ultra-processed grab-and-go foods, this simple recipe solves all of it in one pan. These high protein cottage cheese egg muffins are packed with real, nourishing ingredients that actually keep you full, stabilize energy, and support recovery from processed food habits. They’re quick to make, easy to customize, and perfect for busy mornings when you need something you can trust your body with.


Ingredients (6 servings):

1 cup cottage cheese

1 extra large egg

½ cup chopped vegetables (green onions, broccoli, red bell pepper — as desired)

1 teaspoon Everything Bagel seasoning

¼ cup grated Parmesan cheese



Instructions


Preheat oven to 400°F.

Spray a muffin tin with olive oil, or use silpat liners.  In a bowl, stir together cottage cheese, egg, chopped vegetables, and ½ teaspoon of the seasoning.

Divide mixture evenly into 6 muffin tins (about ¼ cup each).

Top each with grated Parmesan and remaining seasoning.

Bake for 20–25 minutes, until golden brown with crispy edges.

Banana Nut Muffins






     If you are looking for a healthy sugar free alternative to morning, or a pre/post workout fueling (my favorite choice), or simply the perfect snack.  I love how packed this is with fruit and vegetables...and the greatest part is, no one would even know it's all natural...but I do, and it makes me feel so good to consume them guilt free.  For these 12 servings (2 Muffins), they are only 200 calories, 31g carbs, 4g fiber, 27g net carbs, 7g protein, and 5.5g fat.  These are so easy to cart to the gym and have them ready after a hard workout, in fact I have them pre packaged and ready to walk out the door each morning!  ;)

Ingredients for 12 servings~

3 large ripe Bananas

6 extra large Eggs

2 handfuls of fresh Baby Spinach Leaves

1 teaspoon Baking Powder

1 teaspoon-Tablespoon Cinnamon, as desired to taste

Dash Vanilla

3 cups Oats

10oz shredded Carrots

2 chopped Apples (I love Cosmic Crisps)

1/2 Pint (8oz) fresh Blueberries

2 Tablespoons chopped Walnuts

     Add Banana, Eggs, Spinach, Baking Powder, Cinnamon and Vanilla to heavy duty blender, I use my Vitamix, pour into mixing bowl afterwards.  Stir in Oats, Carrots, and Apples til well incorporated, then fold in Blueberries gently.  Drop by 1/4 cup in silpat muffin tins, sprinkle evenly with chopped Walnuts, bake at 375 for 40 minutes.  Enjoy  :)

Easy Brazilian Cheese Bread





     So, I had an extra bag of Tapioca Flour (aka Tapioca Starch), sitting around and needed something to do with it.  That’s when I found a recipe for Easy Brazilian Cheese Bread.  I wasn’t sure at first if I was a fan, the texture is very chewy, but then it began to grow on me.  It’s different and worth stepping out of your comfort zone and trying something new.  Each of the 12 muffin breads are only 135 calories, 14g carbs, zero fiber, 14g net carbs, 2.2g protein and 8g fat.  We had these with dinner, and also for breakfast, so just up to you of when you want to enjoy! ☺️

Ingredients for 12 servings~

1 Egg

1/4 cup Olive Oil

3/4 cup Milk (I used 60 cal/cup Almond Milk)

1.5 cups Tapioca Flour/Starch

3oz grated Cheese (approx a cup after grating, I only buy block cheese and grate my own, I used Mild Cheddar)

Salt to taste, optional (I did not use as we are a low sodium house)

      Beat Eggs and Oil together, blend in Milk, then Flour, and followed by Cheese and Salt if using.  I used a scant 1/4 cup in each silicone lined muffin tin, to equal 12.  Bake at 400 for 20 minutes, cool and Enjoy 😉

Cherry Pecan Muffins







          In looking for the perfect snack, I am always exploring new ideas and flavor combinations.  And, my Cherry Pecan Muffins were a pleasant surprise.  Each of the 15 muffins are only 134 calories, 18.7g carbs, 4.2g fiber, 14.5g net carbs, 5g protein and 4.9g fat.  These are great for breakfast, mid morning, afternoon or evening.  Are you getting the picture, these work well any time of day!  ;)

Ingredients for 15 Muffins~

2 ripe medium mashed Bananas

6 Large beaten Eggs

3 cups Oats

2/3 cup Unsweetened Dried Cherries, diced (reserve a few for sprinkling on top)

1 teaspoon Baking Powder

Dash Cinnamon

Dash Vanilla

1/4 cup chopped Pecans

     Add Bananas to large mixing bowl, beat til smooth, continue to beat in Eggs, then Oats and Cherries, along with Baking Powder, Cinnamon and Vanilla.  Pour 1/4 cup batter into 15 muffin tins, sprinkle with any reserved diced Cherries, along with Pecans.  Bake at 350 for 25-30 minutes.  Enjoy :)

Applesauce Muffins






     Have you tried your hand at going sugar free?  Even with desserts it is possible.  The sweet thing about giving up the white powder is that your taste buds change and adapt, fruits and vegetables become much sweeter, nice bonus eh!?  These all naturally sweetened Applesauce Muffins are only 116 calories, 14g carbs, 2.2g fiber, 11.8g net carbs, 4.2g protein and 5g fat.  These are perfect to have on hand to pass out in the morning, feel free to add a thin layer of nut butter if desired.  I prefer mine solo, but let your taste buds guide your way.♥️

Ingredients for 17 Muffins~

2 ripe medium Bananas, mashed

4 Extra Large Eggs

4oz/1/2 cup unsweetened Applesauce (grind your own or use store bought, I used Mott’s)

1/2 cup Almond Flour

2 1/2 cups Oats

1 teaspoon Baking Powder

Dash Cinnamon

Dash Vanilla

6oz or medium chopped Apple

1/4 cup chopped Pecans

     Add mashed Banana and Eggs to mixing bowl, beat til well incorporated, then beat in Applesauce, Almond Flour, Oats, Baking Powder, Cinnamon and Vanilla one at a time.  Stir in chopped Apple pieces, drop by 1/4 cup batter into 17 muffin tins, sprinkle with Pecans, bake at 350 for 25 minutes.  Enjoy 😊

Lucky Leprechaun Muffins





      Why are my Lucky Leprechaun Muffins lucky you ask!?  I will tell you why...sugar free, gluten free and the only source of fat is a healthy Avocado, (that's where the green comes in for an additional bonus for St Pat's).  Add all those things together and you have a winner on your hands.  Not to mention, each of the 11 muffins are only 130 calories, 21.4g carbs, 4.8g fiber, .8g sugar alcohol, 15.8g net carbs, 4.6g protein and 5g fat.  Perfect way to start your day on a holiday, or any time of day!  So, if you want to get lucky, I encourage you to give these a try!!!  ;)

Ingredients for 11 servings~

2 medium or large ripe mashed Bananas

2 Extra Large Eggs

1 small (approx 3.5oz) ripe mashed Avocado

2 1/4 cups Oats

1/2 cup Cocoa

1 teaspoon Baking Powder

Dash Cinnamon

Dash Vanilla

77 Lily's Stevia Sweetened White Chocolate Chips

     Add Bananas to mixing bowl, beat til smooth, blend in Eggs and smashed Avocado, then continue to incorporate Oats and Cocoa, then finish with adding in Baking Powder, Cinnamon and Vanilla, drop by 1/4 cup to silpat lined, or St Patricks Day themed liners in muffin tin.  Bake at 350 for 20 minutes.  Remove, while still warm, decorate the top of each Muffin with 7 Chips, strive for a Four Leaf Clover for fun, or let you kids play with their creativity!  Enjoy  :)

Oatmeal Chocolate Chip Muffins







     If you are looking for a perfect morning grab and go, then put these on your list of must haves.  These are great for pre/post work out fueling as well, not to mention if you are just looking for a little pick me up!  The macros are pretty friendly also, each of the 12 are only 178 calories, 21.8g carbs, 4.4g fiber, .7g sugar alcohol, 16.7g net carbs, 11.2g protein and 5.6g fat.  These come together quickly, and will last in the fridge all week, you can’t go wrong with these on hand!  

Ingredients for 12 Muffins~

2 ripe smashed Bananas

3 cups Oats

2 scoops Quest Vanilla Protein Powder

3/4 cup Egg Whites

2 Extra Large Eggs

1/4 cup Peanut Butter, sub with favorite Nut Butter, I prefer crunchy

1/4 cup Lily’s Stevia Sweetened Dark Chocolate Chips

1 teaspoon Baking Powder

Dash Cinnamon

Dash Vanilla

     Add Banana to mixing bowl, beat til smooth, blend in rest of ingredients, drop by rounded 1/4 cup into silpat lined muffin tins, bake at 375 for 18 minutes.  Enjoy. ;)

Zucchini Pumpkin Protein Muffins

 







     This recipe is not just for Pumpkin Season…this one can be enjoyed all year round, …especially if you are into healthy and delicious.  And, add a little swipe of Peanut Butter as another layer of fun and nutrition.  Each of these 18 are only 75 calories, 9g carbs, 2g fiber, 7g net carbs, 5.4g protein, and 3g fat.  How many make a serving?…it’s anyones guess.  You will have to try it for yourself and decide.  :)

Ingredients for 18 Muffins~

2 small (approx 9oz total) Zucchini 

2 medium ripe Bananas 

2 extra large Eggs

15oz can Pumpkin

2 scoops Vanilla Quest Protein Powder

1/2 cup ground Almond Flour

1/2 cup Oats

1 teaspoon Cinnamon

1 teaspoon Baking Powder

Dash Vanilla

1.5 Tablespoons chopped Pecans

     Grate both Zucchini in dish towel, squeeze tightly and press out any extra liquid, rest Zucchini in towel to drain while working on rest of recipe.  Add reminder of ingredients to mixing bowl, beat after each addition, add Zucchini in the end, and reserve Pecans til later.  Scoop batter by 1/4 cup to 18 silicone lined cupcake liners, sprinkle with Pecans, bake at 350 for 30 minutes.  Enjoy  :)
