Very Berry Ice Cream

     Don’t you love when you feel like you are getting something for nothing!?  Such is the case with my Very Berry Ice Cream!  I love that I never feel deprived, and it’s because Mother Nature gives me all I need now!  For example, with summer fun right around the corner, I whipped up this easy Ice Cream, (or keep it refrigerated for a lovely Berry Yogurt, I might like it even better this way…don’t tell my grandkids).  This is such a simple dessert that you can easily get the kiddos involved in the making, and they are so much more likely to eat better if you get them involved in the process.  Super fast guilt free, give this one a try!😋

Ingredients for four servings~
16oz container of Cottage Cheese
1-2 cups mixed Berries according to taste (sub with preferred fruit)
Nuts for garnish, as desired

     Add Cottage Cheese and Berries to heavy duty blender and whip til smooth, pour equally into four single serving containers. (I like the single serving better than one big dish because it is so much easier to defrost) Top with nuts, or any extra fruit.  Freeze for approximately 4 hours or til set, or leave refrigerated for a Yogurt feel.  When ready defrost for approximately 30 minutes before consuming, or use the microwave if necessary. Enjoy ☺️

Sugar Free Blueberry Yogurt

     I know we have talked about this before, but who says eating clean isn't fun....and delicious!?  Such is the case with my Sugar Free Blueberry Yogurt!  Wonderful flavor, easy to make and the macros are to die for!  Each of the 4 servings are only 242 calories, 24g carbs, 4g fiber, 20g net carbs, 15g protein and 10g fat.  Did you do a double take on the protein!?  Heck, you could easily call this breakfast.  And feel free to get creative with this base recipe, switch it up with Cherries, Peaches or double the Banana...basically anything your little heart desires!  Have fun with this one! :)

Ingredients for 4 servings~
16oz Cottage Cheese
1 pint fresh Blueberries
1 medium ripe Banana
1/4 cup chopped Walnuts

     Add Cottage Cheese, Blueberries and Banana to heavy duty blender and whip til smooth, pour into parchment lined 8X8 pan and sprinkle with Nuts.  Pop in freezer for 3-4 hour or til soft set.  Enjoy ;)

Cherry Pecan Ice Cream

   Well well well, Kristy from Life Unbinged has done it again!  I saw her put this baby together and knew immediately I had to give this one a try.  Once again, I was right.  #worthit This is a nice treat to enjoy every once in a while.  The entire batch is only 470 calories, 60g carbs, 7g fiber, 53g net carbs, 29g protein and 16g fat.  I would definitely use it as two servings, but you do you dawg.  This is a fun one to try during fresh Cherry season, but using frozen is always an option.  Enjoy ;)

Ingredients for two servings~

1 cup Cottage Cheese

1 rounded cup pitted Cherries (approximately 7oz), chopped to desired size

Ripe Medium Banana (approximately 4oz)

1 Tablespoon chopped Pecans

     Add Cottage Cheese and half the Cherries in a blender and whip til smooth.  In a tupperware, mash banana and stir in remaining Cherries, then pour Cottage Cheese into container and continue to blend, sprinkle top with Pecans, and place in freezer til set, approximately a couple hours.  Enjoy ;)

Sugar Free Vanilla Ice Cream

 I scream, you scream, we all scream for Ice Cream!!!  Settle down settle down, no reason to yell.  Although, what I am going to share will make you squeal with glee!  This Sugar Free Vanilla Ice Cream is a home run for summer fun, …heck even for breakfast!  So simple, so quick, so satisfying.  Each serving is only 139 calories, 24g carbs, 2g fiber, 22g net carbs, 1g protein and 5.3g fat.  If you want to be real industrious, prep several at a time.  Enjoy 🍨

Ingredients for one serving~

1 small to medium Banana

2-3 Tablespoons Lite Coconut Milk

     Slice Banana into discs and lay on parchment lined cookie sheet, I also cut my disc’s in half, put in freezer til solid.  Remove when ready, add to blender along with Milk and whip til desired consistency.  Voila, it’s Ice Cream!!!  Enjoy 🍦

Two Ingredient Blackberry Ice Cream

When Summer time hits, it’s a good time to have healthy snack ideas on hand…especially ones that are simple and sugar free.  My Two Ingredient Blackberry Ice Cream lacks nothing except consumption.  Each serving is only 112 calories, 14g carbs, 7.6g fiber, 6.4g net carbs, 2g protein and 5.7g fat.  This is so fun to make, it would be good to involve the kids.  And, it is so healthy, you could actually have it for breakfast, without guilt!  Enjoy 😉 

Ingredients for one serving~

6 oz fresh Blackberries

1/3 cup Lite Coconut Milk

     Add Blackberries to parchment lined cookie sheet, not touching, and set in freezer til solid.  When ready, remove (I thawed mine slightly), add to heavy duty blender like a Magic Bullet or NutraBullet, along with Milk, whip to desired consistency.  Consume right away.  Enjoy 😊

Raspberry Sorbet

 

     If you are looking for a sugar free decadent rich frozen treat!?  Whelp, I have got you covered.  This is a fun easy project that will make you smile with every bite.  Did I mention sugar free as a huge added bonus, ...I just wanted to say it again?  And, check out these macros, for the entire serving it is only 140 calories, 20g carbs, 10g fiber, 10g net carbs, 2g protein and 6g fat.  Get crazy and make two at at time just for fun!  ;)

Ingredients for one serving~

6oz container Raspberries

1/3 cup lite Coconut Milk

     Add Raspberries to parchment lined cookie sheet, making sure they are not touching, put in freezer til frozen.  When ready, remove and add to heavy duty blender along with Milk, and whip til desired consistency.  Tip: may be necessary to soften Raspberries slightly to make blending easier, use your judgement.  Enjoy :)

Two Ingredient Pineapple Ice Cream

     Not only does my Pineapple Ice Cream consist of two ingredients, it is also sugar free...and did I mention easy and DELICIOUS!!!  We just got back from visiting Disney Land and the famous Dole Whip is everywhere.  I vowed to get home and make a healthy version, and I don't mind saying it was a huge success.  In fact, side by side, I would choose mine any day of the week!  So, why don't you try it for yourself and see if you agree!  Living healthy, and having fun, ...all day everyday!  Enjoy the entire serving for only 132 calories, 22g carbs, 2.3g fiber, 19.7g net carbs, .9g fat, and 5.2g fat.🍍

Ingredients for one serving~

1 fresh Pineapple (trimmed and chopped~ see my video on how to trim in one minute)  Watch trimming tips here👉🏻 Trimming Pineapple 👈🏻

1/3 cup Lite Coconut Milk

     Make sure Pineapple has been diced to small bite sizes, measure out a cup and lay on parchment lined cookie sheet, making sure fruit not touching.  Set in freezer til frozen.  When ready, remove, and add to heavy duty blender, pour Milk in blender and whip til desired consistency.  Enjoy 😉

Chocolate Nice Cream







     Are you looking for a healthy substitute for high fat high sugar Ice Cream!?  Whelp, I have a surprise for you that I think you are going to love love love.  For each of these two servings there are about 220 calories, 57g carbs, 8.2g fiber, 48.8g net carbs, 3.6g protein and 1.3g fat~these numbers are approximate based on size of Banana used in this recipe.  I promise you will never tell the difference, and if I may be so bold, you might even like this better…you will for sure enjoy the after effects tremendously better.  Enjoy the heck outta this one, and consider it a fun science experiment in the kitchen, get your kids involved too!!!  :)

Ingredients for 2 servings~

4 ripe Bananas

2 Tablespoons Cocoa

     Peel and slice Bananas into discs, line a cake pan with wax paper, lay Banana circles on wax paper and store in freezer til frozen, or at least semi solid.  Remove when ready, add to HEAVY DUTY blender, I used my Vitamix, and you may need to let the Bananas soften slightly so they don’t burn up your motor, add in Cocoa Powder and whip to desired fluffy consistency.  Divide into two servings and share, or keep both to yourself.  To share or not to share…that is the question!  Enjoy. ;)

Keto Caramel Sauce






     Is there anything sweeter than Caramel Sauce....how bout carbless Caramel Sauce...!?  If you are looking for a good deal on toppings, this one is at the top of the list.  Each Tablespoon is only 50 calories, 3.9g carbs, 3.9g sugar alcohol, ZERO net carbs, zero protein and 10.5g fat.  If that doesn't say celebrate, I don't know what does!

Ingredients for one cup~
1/4 cup/4 Tablespoons Butter
1/3 cup Brown Sugar Swerve
1/2 cup Heavy Whipping Cream

     Bring Butter and Brown Sugar to low simmer for 5 minutes, add Cream and simmer one more minute.  That's it, #poofitscaramelsauce.  Store in fridge.  Enjoy  :)

Keto Vanilla Ice Cream


     Scoot over DQ, there's a new Ice Cream in town...and it's ridiculously delicious!  Keto is a non suffering eating plan, I'm convinced.  Each of these 8 half cup servings are 244 calories, 6.5g carbs, 6g sugar alcohol, .5g net carbs, 2g protein and 24g fat.  Add your favorite toppings, for example...Berries, Keto Ganache, Nuts, Whipping Cream, Peanut Butter or just plain... and enjoy every decadent bite!  PS  I make a simple Ganache by stirring together a Tablespoon Heavy Whipping Cream and 1 teaspoon Cocoa, add sweetener if desired, but I like the dark rich unsweetened flavor.

Ingredients for 8 half cup servings~
6 large Eggs Yolks
2 cups Heavy Whipping Cream
1 cup 25 cal/cup Cashew Milk
1/4 cup Lakanto Confectioners Monk Fruit~use code Paige20 for discount at checkout
Dash Vanilla
Dash Cinnamon
Dash Salt

     Add Egg Yolks to bowl and beat with mixer til well incorporated and fluffy, about 2-3 minutes.  Add remaining ingredients to saucepan and heat til light simmer, remove from heat and add a few spoonfuls to Egg Yolks and stir, repeat a few more times and pour Yolk mixture into saucepan, return to heat and bring mixture to 170 degrees on cooking thermometer, remove and cool to room temperature.  Chill overnight.  When ready, add to Ice Cream Maker and follow manufacturer instructions.  I use the Cuisinart 2Qt Yogurt & Ice Cream Maker.  Enjoy  :)
