Protein Cheesecake Muffins

     Are you looking to mix it up a bit for breakfast, ...quite frankly lunch, dinner, snack or even a dessert.  Then you are looking in the right place, keep reading.  This is protein in the most fun way possible.  Each of these 20 Protein Cheesecake Muffins are only 67 calories, 4.5g carbs, .5g fiber, 4g net carbs, 8g protein, 2.1g fat.  So the question becomes, how many make a meal.  Can you see how fast those grams of protein can add up!?  These rival the protein power of Beef or Chicken...!  These would even be great as a pre or post work out fueling.  So many options, so many bites to be had!  :)

Ingredients for 20 Muffins~

16oz container Cottage Cheese

4 Extra Large Eggs

2~5.3oz 0% Fage Greek Yogurt

2 scoops unflavored unsweetened Protein Powder (I use Quest Multi Purpose Protein Powder)

1 Tablespoon Lemon Juice

16oz container fresh Blueberries

     Add all ingredients except Blueberries to blender and whip til smooth, then add mixture to bowl and stir in Blueberries, drop by 1/4 cup into silpat lined cupcake tin, bake at 325 for 30 minutes.  Cool to room temperature, chill in fridge, best if over night.  Enjoy  :)

Lucky Leprechaun Muffins





      Why are my Lucky Leprechaun Muffins lucky you ask!?  I will tell you why...sugar free, gluten free and the only source of fat is a healthy Avocado, (that's where the green comes in for an additional bonus for St Pat's).  Add all those things together and you have a winner on your hands.  Not to mention, each of the 11 muffins are only 130 calories, 21.4g carbs, 4.8g fiber, .8g sugar alcohol, 15.8g net carbs, 4.6g protein and 5g fat.  Perfect way to start your day on a holiday, or any time of day!  So, if you want to get lucky, I encourage you to give these a try!!!  ;)

Ingredients for 11 servings~

2 medium or large ripe mashed Bananas

2 Extra Large Eggs

1 small (approx 3.5oz) ripe mashed Avocado

2 1/4 cups Oats

1/2 cup Cocoa

1 teaspoon Baking Powder

Dash Cinnamon

Dash Vanilla

77 Lily's Stevia Sweetened White Chocolate Chips

     Add Bananas to mixing bowl, beat til smooth, blend in Eggs and smashed Avocado, then continue to incorporate Oats and Cocoa, then finish with adding in Baking Powder, Cinnamon and Vanilla, drop by 1/4 cup to silpat lined, or St Patricks Day themed liners in muffin tin.  Bake at 350 for 20 minutes.  Remove, while still warm, decorate the top of each Muffin with 7 Chips, strive for a Four Leaf Clover for fun, or let you kids play with their creativity!  Enjoy  :)

Apple Pie Protein Muffins






      Lucky for us, Apples are a favorite all year round!  I love having an apple a day, just like the doctor ordered…and yes, I am a follower!  These are special and unique because there is no added sugar or fat, but delicious none the same.  If you need a little extra sweetness, knock yourself out and add some Monk Fruit.  As I have gone completely off sugar, I have noticed all things tasting a little sweeter to me, even life in general.  Each of these 12 servings are only 104 calories, 10.6g carbs, 1.5g fiber, 9.1g net carbs, 7.5g protein and 4g fat.  Perfect macros for the perfect Muffin!

Ingredients for 12 Muffins~

8oz chopped Fuji Apple, sub with favorite Apple, divide into two equal portions

2 medium ripe mashed Bananas

2 extra large Eggs

1/4 cup Egg Whites

2 scoops Vanilla Quest Protein Powder

1/2 cup Almond Flour

1/2 cup Oats

1 teaspoon Baking Powder

Dash Cinnamon

Dash Vanilla

1 Tablespoon chopped Pecans

     Add 4oz chopped Apple to Magic Bullet or blender til liquid, along with Bananas til fully combined, add to mixing bowl along with remainder of Apples, Eggs and Egg Whites, stir to combine.  Then add in Protein Powder, Flour, Oats, Baking Powder, Cinnamon and Vanilla til thoroughly combined, drop by 1/4 cup into silpat lined cupcake tins, sprinkle the tops with Pecans, bake at 350 for 25 minutes.  Enjoy. :)

Suntella Brownie Cupcakes








     Do you like the idea of a little something special on top!?  These Suntella Brownie Cupcakes are just that.  The Lakanto Monk Fruit company produces a delicious Suntella Chocolate Sunflower Spread, which is perfect for topping just about anything.  Each of the 6 cupcakes are only 155 calories, 24.5g carbs, 4g fiber, 11.7g sugar alcohol, 9.3g net carbs, 5.4g protein and 10.5g fat.  The biggest decision will be if to have these for breakfast, snack or dessert.  Good luck with that!  ;)

Ingredients for 6 Cupcakes~

3 Tablespoons Butter, softened to room temperature

1/3 cup Lakanto Golden or Classic Monk Fruit

2 Extra Large Eggs, room temperature

1 cup Oats, ground to powder in Magic Bullet or Blender

1/3 cup Cocoa Powder

1 teaspoon Baking Powder

Dash Cinnamon

Dash Vanilla

2 Tablespoons Lakanto Suntella Sunflower Chocolate Spread 

     Add Butter and Monk Fruit to mixing bowl and whip til fluffy and well incorporated, then blend in Eggs, followed by Oats, then Cocoa, Baking Powder, Cinnamon and Vanilla.  Add 1/4 cup batter to 6 silicone lined muffin tins, then top each with 1 teaspoon Chocolate Spread, bake at 350 for 17 minutes.

Easter Bunny Cupcakes






     The Easter Bunny needs all the energy he can muster, especially on Easter morning.  It takes a lot of strength to fly around the world delivering candy to everyone's backyard.  That's why he tanks up on his favorite food, Easter Bunny Cupcakes, right before he hits the road...or should I say sky...oh wait, maybe that's only Santa Claus,...I digress.  Each of the 9 Cupcakes are only 194 calories, 28.3g carbs, 2.3g fiber, 21.3g sugar alcohol, 4.7g net carbs, 4.8g protein and 16.1g fat.  If it does all kinds of wonders for this furry creature, imagine what it would do for you, you might not grow a tail, but it's possible you will feel like the Easter Energizer Bunny! 

Ingredients for 9 Frosted Cupcakes~

4oz chopped Fuji Apple

3 Tablespoons Sour Cream, room temperature

1 large (approx 3.5oz/yield 1/2 cup) grated Carrot

1/3 cup Oats, ground to flour in Magic Bullet

2 Tablespoons Butter, room temperature

1/2 cup Lakanto Golden Monk Fruit~use code Paige20 at checkout for discount 

1 XL Egg, room temperature

1 cup Almond Flour

1 teaspoon Baking Powder

Dash Cinnamon

Dash Vanilla

2 Tablespoons Butter, room temperature

3oz/6 Tablespoons Cream Cheese, room temperature

1/2 cup Lakanto Confectioners Monk Fruit~use code Paige20 for discount at checkout

Crushed Walnuts, for garnish as desired, optional

Sprinkles, for garnish as desired, optional

     Add chopped Apples and Sour Cream to Magic Bullet, grind to Applesauce consistency, set aside.  Trim, clean, and grate Carrot using smallest grater possible, set aside.  Add Oats to Magic Bullet, grind to flour, set aside.  Add Butter and Golden Monk Fruit to bowl, beat til well incorporated and fluffy, beat in Eggs til well blended.  Then add in Apple mixture and Carrots, beating into batter.  Finish by adding in Oats, Almond Flour, Baking Powder, Cinnamon and Vanilla til well incorporated.  Drop by 1/4 cup into silpat lined muffin tins, bake at 350 for 32 minutes.  Meanwhile, using second set of ingredients, add Butter and Cream Cheese to bowl, beat til well blended and fluffy, continue to beat in Confectioners Monk Fruit.  When Cupcakes have cooled, add frosting to piping bag with Wilton 2D decorating tip, pipe around perimeter working in circles to the center.  If prefer, frost as desired.  Garnish with Nuts and Sprinkles if desired, not included in macros.  Enjoy  :)

Heart Healthy Valentines Cupcakes






     It's all about matters of the heart, especially at Valentines.  Even better if it's good for the ole ticker!  I have a couple of ingredients that really promote health in this recipe, which spells love in my books.  Each of these 10 cupcakes are only 166 calories, 19g carbs, 3.6g fiber, 12.8g sugar alcohol, 2.6g net carbs, 5.4g protein and 14.2g fat.  Make a batch for your sweetheart, kids, teachers, parents, friends, coworkers...or just keep them for yourself!  ;) 

Ingredients for 10 Cupcakes~

1 small (approx 4oz trimmed) Zucchini

2 Tablespoons Butter, room temperature

1/3 cup Lakanto Monk Fruit~use code Paige20 at checkout for discount

1 small (approx 3.5oz flesh) ripe Avocado, peeled and seeded

2 XL Eggs, room temperature

1 cup Almond Flour

1/2 cup Cocoa Powder

1 teaspoon Baking Powder

Dash Cinnamon

Dash Vanilla

Food Coloring if desired, optional

- - - - - - - - - - - -

1 Tablespoon Butter, room temperature 

1/4 cup/2oz Cream Cheese, room temperature

2 Tablespoons Sour Cream

1/3 cup Lakanto Confectioners Monk Fruit~use code Paige20 for discount at checkout

Sprinkles for garnish as desired, not included in macros

     Trim ends of Zucchini, grate into a dish towel, squeeze excess liquid, and set aside.  Meanwhile, using first set of ingredients, add Butter and Monk Fruit to mixing bowl, beat til well combined, then blend in Avocado and Zucchini, next beat in Eggs, then remaining first set of ingredients.  Drop by 1/4 cup into heart shaped silicone cupcake liners, use regular rounds if necessary, set on a baking pan, bake at 350 for 25 minutes.  Remove, and cool.  Meanwhile, using second set of ingredients, beat Butter and Cream Cheese til well blended, add in Sour Cream and finally Confectioners Monk Fruit (add in Food Coloring if desired) til fully incorporated.  Frost each Cupcake equally (approximately 1/2 Tablespoon) and decorate as desired.  Enjoy  :)

Fudge Sprinkled Yellow Cupcakes







 Let's be honest ...it's all about the frosting.  And, if you want to shave 55 calories off each Cupcake then cut the Frosting ingredients in half...but why would you!?  In reality, I consider this one having a little bit of Cupcake with my Fudge...which is exactly how I like it.  Each of these 6 are 293 calories, 28g carbs, 3.3g fiber, 21.3g sugar alcohol, 3.4g net carbs, 8.5g protein and 26g fat.  The next time you are in the mood for simple indulgence, give this one a try!  :)

Ingredients for 6 Frosted Cupcakes~

2 Tablespoons Butter~room temperature

1/3 cup Lakanto Monk Fruit~use code Paige20 for discount at checkout 

2 Eggs~room temperature (I use Extra Large)

2 Tablespoons Sour Cream

1 cup Almond Flour

1 teaspoon Baking Powder

Dash Vanilla

3oz/6 Tablespoons Cream Cheese~room temperature

1/4 cup Sour Cream

1/4 cup Cocoa

Sprinkles, if desired for garnish (not included in macros)

     From first set of ingredients, add Butter and Monk Fruit to bowl and mix with beaters til fluffy, then add in Eggs til well incorporated, followed by the rest of the ingredients til well beaten.  Drop 1/4 cup batter into 6 silicone lined muffin tins, bake at 350 for 20 minutes.  Meanwhile, using second set of ingredients, beat Butter and Cream Cheese til smooth, beat in Sour Cream, then Cocoa and Monk Fruit til well incorporated.  When Cupcakes are cooled, frost each equally, if desired add Frosting to piping bag and pipe on Cupcakes.  Garnish with Sprinkles if desired.  Enjoy  :)

Brownie Muffins

                        




     If you enjoy a dense European style baked good then Brownie Muffins will be right up your alley.  These lean on the drier side, similar to what our friends on the east side of the pond prefer.  It is not always my preference, but I am open to diversity in my pastries now and again.  Each of these 6 Brownies, are only 263 calories, 27g carbs, 17g sugar alcohol, 6g fiber, 4g net carbs, 5.5g protein and 21g fat.  This might even be considered a breakfast food, I can't think of a better way to start your day!  ;)

Ingredients for 6 Brownie Muffins~

9oz bag Lily's Stevia Sweetened Chocolate Chips

1/4 cup/4 Tablespoons Butter

2 Extra Large Eggs, room temperature

1 Tablespoon Lakanto Monk Fruit~use code Paige20 at checkout for discount

1 Tablespoon Flour

1/4 teaspoon Salt

     Stir Chips and Butter together in a microwave safe bowl, heat for 20 seconds, stir and repeat if necessary til fully melted and incorporated.  Stir in remaining ingredients, feel free to use beaters if desired, drop by 1/4 cup in 6 silpat lined muffin tins.  Bake at 375 for 18 minutes, remove til room temperature, chill overnight before serving, store leftovers in fridge.  Enjoy  :)

1/4 cup/4 Tablespoons Butter, softened to room temperature

1 cup Almond Flour
