Travel Pancakes

     I have an upcoming trip looming, and as always, I plan and prep my food even when out of my zip code.  So I bring with me what I can to keep myself safe...and quite frankly, I like my own food better than anyone else's.  Starting my day off right is of high importance, so creating my Travel Pancakes was a natural next step.  Not to mention, they are super good, and can hang at room temperature for several hours.  These sugar free beauties are only 302 calories, 27g carbs, 8g fiber, 19g net carbs, 25.5g protein, and 10g fat...did you pick up on that protein number!?  Macros don't include added fruit, add fruit to batter as desired, plenty sweet with Apples and Blueberries.  Simply satisfying!!!  :)

Ingredients for one serving~

1/3 cup Oats

1/3 cup Egg Whites

1/3 cup Cottage Cheese

2 Tablespoons Ground Flaxseed

Large handful of fresh Spinach Leaves, feel free to add as much as desired

2 Tablespoons shredded Carrots, feel free to add as much as desired

Chopped Apples, as desired

Blueberries, as desired

     Add first 6 ingredients to blender, and whip til smooth.  Drop by 1/3 cup on hot Pam sprayed skillet, add desired amount of Apples and Blueberries on top batter and slightly press down, flip Pancake when ready and cook other side.  As an alternate method, I made 3 batches at once when preparing for travel,  and baked the Pancakes at 375 for 15-20 minutes on silpat lined cookie sheet.  Either way works, making a large batch was easy for the oven, and the single batch was easy in the skillet.  Enjoy :)

Peanut Butter Cup Pancakes










      Who's hungry for breakfast!?  Depending on your answer, you can decide if this recipe is best for one or two.  The entire batch is only 356 calories, 26.5g carbs, 7g fiber, 8g sugar alcohol, 11.5g net carbs, 31.5g protein, and 18.6g fat.  Can you believe how much protein this stack holds, perfect way to start your day!  Popeye would be a huge fan!  ;)

Ingredients for one 5 stack of Pancakes~

2 Tablespoons raw Oats

2 Tablespoons Lakanto Peanut Butter Powder

1/4 cup low fat Cottage Cheese

1/4 cup Egg Whites

1 package of Quest Nutrition Peanut Butter Cups, chop each one but keep separate

Lakanto Pancake Syrup

     Add Oats to Magic Bullet to blend to powder, then add in Peanut Butter Powder, Cottage Cheese and Egg Whites, continue to mix in blender.  Chop up the Peanut Butter Cups, add one of the chopped Peanut Butter Cups to the batter and continue to blend, but only for 2-3 seconds.  Drop batter by 2 Tablespoons onto hot cooking spray coated skillet, cooking thoroughly on both sides, repeat 4 more times to finish up batter.  Stack and garnish with remaining chopped Peanut Butter Cup, drizzle with Syrup if desired (not included in macros).  Serves one or two.  Enjoy  :)

Maple Peanut Butter Chocolate Chip Pancake Truffles







     Don't you just love pancakes, but never have time in the morning rush!?  Whelp, I have solved that dilemma in a delicious way.  We've all heard of prep work, and with a little planning, these can be yours as soon as the sun comes up!  Each of the 11~1/4 cup Pancake Truffles are only 95 calories, 14g carbs, 9g fiber, .9g sugar alcohol, 4.1g net carbs, 6.7g protein and 4.2g fat.  Enjoy these all natural plant based monk fruit sweetened delights with delight!!!  :)

Ingredients for 11 servings~
2 teaspoons Coconut Oil, melted
1 cup warm Water
2 Eggs
1/4 cup Lakanto Peanut Butter Powder~use code Paige20 at checkout for discount
1 cup Lakanto Pancake Mix~use code Paige20 at checkout for discount

1/2 cup Lakanto Peanut Butter Powder~use code Paige20 at checkout for discount
1/2 cup Lakanto Maple Syrup~use code Paige20 at checkout for discount
1/4 cup Lakanto Chocolate Chips~use code Paige20 at checkout for discount

     Add first set of ingredients to bowl, stir til fully incorporated, pour into cooking spray coated skillet til cooked thru on each side, remove, cool and crumble, set aside.  Meanwhile, from second set of ingredients, add Peanut Butter Powder and Syrup to mixing bowl til smooth, dump in pancakes and use hands to mash together til completely combined.  Add in Chocolate Chips, and continue mixing with hands.  If you want your Chips to be slightly melted, then add in while Pancakes are still slightly warm.  Scoop out by 1/4 cup portions, roll into balls, chill til set.  Enjoy  :)

Keto Cream Cheese Pancakes






     I came across several recipes on Pinterest to support the Egg Fast 5 day plan.  These really help break up the monotony of the day.  I mean, who wouldn't look forward to Pancakes topped with Heavy Whipping Cream.  Technically HWC is not allowed on the Egg Fast Diet, but it is a fat and I decided it is ok...and I pretended that I didn't read it wasn't allowed.  So sue me...  :/  In the meantime, enjoy this hearty decadent wonder for 580 calories, zero carbs or fiber, 20g protein and 52g fat.  If you are so inclined, split this into two meals and share one with your buddy doing this with you.  Let your fork be your guide!  :)

Ingredients for Keto Cream Cheese Pancakes~
2oz/1/4 cup Cream Cheese, softened to room temperature
2 jumbo Eggs
Lakanto Monk Fruit (optional and add amount to desired sweetness, I used 1-2 Tablespoons~use code Paige20 at checkout for discount)
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla
- - - - - - - - - - - -
1/4 cup Heavy Whipping Cream
Lakanto Confectioners Monk Fruit (optional and add amount to desired sweetness, I use about 1 Tablespoon~use code Paige20 at checkout for discount)

     Add first set of ingredients to bowl and mix well with beaters til fully incorporated, drop by scant 1/4 cup onto hot Pam coated skillet and heat til cooked, flip and cook other side, remove to cooling rack, repeat 3 more times with remaining batter.  Meanwhile, beat Cream with mixer til stiff peaks form and fluffy.  Stack Pancakes and top with Cream and enjoy every decadent bite!  :)
