Banana Nut Bread Cookies





     This simple little throw together is a great way to start the day, or just carry with you as things unfold from morning til night!  My Banana Nut Bread Cookies are like taking a healthy pill with each and every bite.  Each of these bite size wonders are only 33 calories, 5g carbs, .7g fiber, 4.3g net carbs, 1.1g protein and .8g fat.  So basically you can have a bowl of Oatmeal, or feel like you are cheating and opt for 10 of these instead…of course, it’s your call!!!  

Ingredients for 22 cookies~

1 extra large ripe mashed Banana

1 extra large Egg

1.5 cups Oats

1 teaspoon Baking Powder

Dash Cinnamon

Dash Vanilla

1 Tablespoon chopped Pecans

     Add Banana to mixing bowl and mash with Beaters, continue to incorporate the Eggs, then Oats, Baking Powder, Cinnamon and Vanilla.  Drop by level Tablespoon onto Silpat lined cookie sheet, and top each Cookie with chopped Pecans.  Bake at 375 for 12 minutes.

Chocolate Chip Banana Cookies

 





     If you are looking for the perfect healthy cookie, then this one is for you.  Completely sugar free, and friendly to your daily macros.  Each of the 20 cookies are only 41 calories, 4.9g carbs, .9g fiber, .1g sugar alcohol, 3.9g net carbs, 1g protein and 1.3g fat.  The only question is how many of these make up a serving…decisions decisions… 😉

Ingredients for 20 cookies~

1 extra large ripe Banana

1 Tablespoon Butter, softened to room temperature

1 extra large Eggs

1 cup Oats

Dash Cinnamon

Dash Vanilla

1/4 cup Lily’s Stevia Sweetened Dark Chocolate Chips

     Add Banana to mixing bowl, beat til smooth, continue to incorporate Butter and Eggs, followed by Oats, Cinnamon, Vanilla and Chips, drop by Tablespoon onto silpat lined cookie sheet, bake at 350 for 12 minutes.  Enjoy ☺️

Chocolate Chip Oat Cookies







     These simple little sugar free vegan cookies are a delight to the senses.  These come together quick, but taste like a bowl of complication.  Each of the 20 cookies are only 43 calories, 7.3g carbs, 3.2g fiber, .4g sugar alcohol, 3.7g net carbs, .9g protein, and 1.7g fat.  These stay nice in the fridge for several days…if they last that long.  Perfect as a healthy snack or decadent dessert!!!😊

Ingredients for 20 cookies~

2 ripe smashed Bananas

1 cup Oats

1/4 cup unsweetened shredded Coconut

1/4 cup Lily’s Stevia Sweetened Dark Chocolate Chips 

1 teaspoon Baking Powder

Dash Cinnamon

Dash Vanilla

     Add Bananas to mixing bowl and mash til smooth, blend in rest of ingredients, drop by level Tablespoons on silpat lined cookie sheet, bake at 350 for 10-12 minutes.  Enjoy 😉

Banana Breakfast Chocolate Chips






     Wanna make breakfast more of an event!?  Try out my Banana Breakfast Chocolate Chips for size!!!  Each of these 26 minis are only 38 calories, 4.8g carbs, 1.3g fiber, .3g sugar alcohol, 3.2g net carbs, 1.2g protein and 2g fat.  These are so fun, and would be great to get your kids involved.  How many is one servings..., I dunno...up to you to decide! ...then let me know  ;)

Ingredients for 26 mini Cookies~

2 ripe medium mashed Bananas

1 extra large Egg

1/2 cup Almond Flour

1/2 cup Oats

1/4 cup Lily's Stevia Sweetened Dark Chocolate Chips

1 teaspoon Baking Powder

1 teaspoon Cinnamon

1 teaspoon Vanilla

Dash Salt to taste

     Add all ingredients to bowl, mix til thoroughly blended, drop by level Tablespoon on parchment lined cookie sheet, bake at 350 for 11 minutes.  Enjoy  :)

Pumpkin Bites

 




     If you are looking for the perfect bite size snack, and all things healthy, then this one was made with you in mind!  These 32 mini Pumpkin Bites are only 39 calories, 6.4g carbs, .9g fiber, 5.5g net carbs, 1.4g protein and 1g fat.  So then the question becomes, how many mini’s make a serving…that’s a question only the consumer can answer!  ;)

Ingredients for 32 mini Pumpkin Bites~

2 medium mashed (8-10oz) ripe Bananas (if you need additional sweetness add in another Banana)

2 room temperature Extra Large Eggs

3/4 cup Pumpkin (I use Libby’s, cheaper brands are more watery)

2.5 cups uncooked Oats~grind into flour

1 teaspoon Baking Powder

1 teaspoon Cinnamon or Pumpkin Pie Spice

Dash Vanilla

1 Tablespoon chopped Pecans

     Add Banana, Eggs, Pumpkin to mixing bowl til well blended, then blend in Oats, Baking Powder, Cinnamon and Vanilla.  Drop by level Tablespoon on silpat lined cookie sheet, sprinkle with Pecan Chips, bake at 350 for 12 minutes.  Enjoy. :)

No Bake Chocolate Chips






     Full disclosure, it took me 5 tries to get this one right!  BUT…it was worth it, and its sugar free, naturally sweetened thru natural ingredients.  AND, minimal ingredients at that!  Each of these 6 portions are only 300 calories, 35.3g carbs, 8.3g fiber, 1.3g sugar alcohol, 25.7g net carbs, 9g protein, and 16g fat.  These are simple, and simply good, and good for you…even for the kiddos!  Try these out for your next snack attack!  ;)

Ingredients for 6 servings~

2 medium (8oz total) ripe peeled mashed Bananas 

1/2 cup no sugar added Chunky Peanut Butter ( sub with Creamy)

2 cups Oats

1/4 cup Lily’s Stevia Sweetened Dark Chocolate Chips

     Add all ingredients to bowl, stir til well blended, reserve a few Chips to garnish on top if desired.  Press into lined 8X8 pan and chill in fridge til set several hours or overnight.  Enjoy. :)

Olive Oil Chocolate Chips







     I like trying the new and unique, such was the beginning of my Olive Oil Chocolate Chips, these are a Keto lovers dream come true.  And even if you are not low carb, these are a pleasant surprise of yum.  The entire batch is only 340 calories, 26g carbs, 8g fiber, 14g fiber, 4g net carbs, 7g protein and 32g fat.  I highly suggest you work these into your daily life, and when you make them into 8 pieces it feels like so much more!  Cheers  ;) 

Ingredients for 8 small cookies~

1/4 cup Almond Flour

1 Tablespoon Lakanto Monk Fruit

1 Tablespoon Olive Oil

1 teaspoon Water

1/4 teaspoon Baking Powder

Dash Cinnamon

Dash Vanilla

1 Tablespoon Lily's Stevia Sweetened Dark Chocolate Chips

     Add all ingredients to a bowl, mix til well blended, break into 8 equal parts, add to silpat lined or cooking sprayed cookie sheet, bake at 350 for 8 minutes.  Enjoy  :)

Oatmeal Chocolate Chips






      Here is a quick little cookie recipe to throw together in a jiffer, and you get to enjoy the entire batch...share if you want, but why would you!?  Just askin'...  All 8 cookies are only 270 calories, 38g carbs, 8g fiber, 14g sugar alcohol, 16g net carbs, and 20g fat.  Such a perfect yummy dessert, all guilt free!

Ingredients for 8 small cookies~

1/3 cup Oats, reserve 1 Tablespoon to side

1 teaspoon Water

1 Tablespoon Lakanto Monk Fruit~use code Paige20 at checkout for discount 

1 Tablespoon Olive Oil

1/4 teaspoon Baking Powder

Dash Cinnamon

Dash Vanilla

1 Tablespoon (60 Chips) Lily's Stevia Sweetened Dark Chocolate Chips

     Add Oats to Magic Bullet/Blender (reserve 1 Tablespoon), blend to powder, add to bowl with remaining ingredients, stir til well blended, break into 8 small balls, add to parchment or cooking spray lined cookie sheet, bake at 350 for 8 minutes.  Enjoy  :)
