Personal Pan Pizza Crust

     Whether it's Breakfast Pizza, or just simply Lunch or Dinner, this is definitely one to try, ...not to mention keeping a few on hand in the freezer.  These are so simple to make and pairs perfectly with just about anything.  My Personal Pan Pizza Crust makes 9 servings, each one is only 207 calories, 22g carbs, 3.3g carbs, 26.7g net carbs, 14g protein, and 7g fat.  There are no rules when it comes to toppings, I guess you could eat it plain but why would you when your options are unlimited.  Be your own Picasso, dream big!

Ingredients for 9 servings~
3 cups Oats
24oz container of Cottage Cheese
2 Extra Large Eggs
1/4 cup Ground Flax Seed
1 teaspoon Baking Powder
Everything Bagel Spice Seasoning to taste (sub with favorite Spices)

     Add all ingredients to a large mixing bowl, stir til well incorporated, scoop by scant 2/3 cup and pat into circles on parchment lined cookie sheet, bake at 350 for 20 minutes.  Use as desired.  Enjoy ;)

Roasted Kabocha

     I love a fun project in the kitchen, especially when I am trying something new.  Such is the case with the Kabocha Squash.  This little green looking pumpkin is known for its sweet nature, kind of a mix between Sweet Potatoes and Chestnuts.  But the special bonus feature is that you can eat the skin, which makes it super easy to prepare.  This makes the perfect side dish, or sprinkle in salads, or heck even soups.  Terrific all year long, but most people enjoy in the cooler temps…but you do you boo!😉

Ingredients~

Kabocha Squash

Olive Oil

Seasoning as desired

     Using a fork or knife, puncture Squash several times.  Microwave for 3 minutes, let cool, slice in half once cooled to touch, remove strands and seeds, place cavity face down and slice into half moons.  Toss with a scant amount of Olive Oil, Season as desired, roast at 400 for 30-40 minutes depending on thickness of slices, flip half way thru.  Enjoy ☺️

Parmesan Crusted Carrots

 





     If you are looking for a fun little twist on those orange sticks, then read on.  This is a simple leveled up recipe with Bugs Bunnies favorite food.  This can fall into the fancy category, or will hold its own as a simple side.  Heck, even perfect as a healthy snack.  So your biggest decision will be how and when to serve!  ;)

Ingredients~

1 pound Carrots, peeled and trimmed into sticks

Scant amount of Olive Oil

Seasoning as desired:  I used Cumin, Chili Lime Powder, Salt, Garlic, Pepper

2 Tablespoons grated Parmesan

     Peel, trim, and slice Carrots into “Matchsticks”, toss with scant amount of Olive Oil, sprinkle with seasoning as desired, top with Parmesan.  Bake on parchment lined cookie sheet at 400 for 30 min, remove and enjoy! 😉

Sweet Potato Grains and Hummus

                                                                                      


 





  If you like a nice combo of flavors, this is a great opportunity to try out a bouquet of nuances.  Perfect as a side dish, but hearty enough for a main!  Not to mention, this can be done in bulk, and divided up to use all week long.  Definitely worth a try, and would be appropriate any time of year! 😉

Ingredients~

2 Sweet Potatoes, diced

2 Tablespoons Olive Oil

3 medium Yellow Onions, diced

1 Tablespoon chopped Garlic

1 cup dry Lentils

1/3 cup dry Qunioa

2/3 cup dry Rice

1 Tablespoon Cumin

Salt, as desired

Pepper, as desired

- - - - - - - - - - - - - - -

1 can Garbanzo Beans

1/4 cup Lemon Juice

1/4 cup Tahini

1 Tablespoon chopped Garlic

Cumin, as desired

     Toss diced Sweet Potato with 1 Tablespoon Olive Oil, bake at 400 for 40 minutes, toss half way thru baking time.  Meanwhile, toss Onion and remaining Tablespoon Olive Oil, add to skillet with Garlic, sauté til golden brown on medium heat, as slow as possible.  Lastly, add three grains to large stock pot with 8 cups water.  Side Note:  feel free to add whatever combination of 2 total cups of the grains if you prefer different ratios.  Bring water to boil, add Lentils, simmer for 15 minutes with lid,  then add Quinoa and Rice and simmer another 15 minutes with lid.  Let rest for 5 minutes, if there is any excess liquid, drain off.  Lastly, stir in Cumin til fully combined, then stir in Onions and Sweet Potatoes. Season as desired with Salt and Pepper.  Serve as is, or top with Hummus.  To make Hummus, drain Garbanzo Beans, reserve 1/3 cup liquid, add Beans and reserved liquid and remaining ingredients to heavy duty blender and whip til smooth.  Enjoy as desired! 😋

Golden Beets

     Do you use Golden Beets?  I bet the answer is no, well guess what, me neither…until NOW!!!  I have shared in the past how to microwave Red Beets, but now I have tried my method on both, and it works great equally.  Follow along to see how simple this can be, and what a colorful beautiful addition to just about anything.  How can you go wrong by giving this one a try!  PS  As an added Bonus, see how I also use the Stems and Leaves.  ☺️

Ingredients~

Golden Beets with Stems and Leaves

     Rinse Beets, Stems and Leaves, cut the stem off 1 inch above Beet, set aside.  Meanwhile, trim top and bottom off of Beet, and remove rest of skin, dice, add to microwave safe bowl, with 1/2 cup water and dash of salt.  Microwave for 8 minutes, remove and test with fork, if still firm, microwave another 3 minutes.  I used 3 Beets and needed the full 11 minutes.  Remove and cool, use as a side, or throw in a Salad.  I cleaned the Stems and Greens, sliced finely and used in a Salad with other mixed Greens, Grilled Salmon, Red and Golden Beets, a dollop of Greek Yogurt, Pumpkin Seeds and drizzle of Balsamic Vinegar.🥗
