Philly Cheese Steak Stuffed Peppers

Have you been to Pat's or Geno's in Philly!?  Well, if not, you should know there is a long line at both places, and they are located directly across the street from one another!!!  So, in order to satisfy our curiosity, we obviously had no choice but to try them both... one right after the other ...  don't judge, it was in the name of science, duh!  Anyhoo, I digress, I had a hankering to bring Philly home to Wichita and started with a little left over grill Sirloin that I wasn't sure what to do with!!!  Welp, Green Peppers happen to be on sale this week so there shall a Philly Cheese Steak idea be born !!!  And away we go ...

Ingredients~
Grilled Sirloin Steak, sliced and diced~ enough to fill a hollow Green Pepper
Diced Yellow Onion
Sliced Mushrooms
Diced Baby Carrots
3 drops Sriracha, or more to taste
Heaping Teaspoon chopped jarred garlic
1 teaspoon EVOO
1 Large Green Pepper, slice off top and dice, set aside.  Then de seed pepper and slice in two.
4 slices Fat Free Swiss Cheese
1 Roma Tomato, diced and drained on paper towel
Salt and Pepper to taste if desired

Start by either grilling Sirloin Steak and slicing and dicing into small bite size pieces, OR hopefully you will plan a steak dinner and save some of the left overs to use in this recipe.  Either  way, you need very finely diced steak to have on hand.  Meanwhile, heat teaspoon EVOO in skillet and add onions, garlic and Sriracha til golden brown.  Then add carrots to cook thru, followed by diced green pepper top.  When softened, add mushrooms to cook thru.  When everything has finished cooking, add steak and stir in to heat thoroughly.  Meanwhile, lay one slice of fat free Swiss cheese in each of the Bell Pepper halves, then fill each half with meat mixture.  Top each half with another slice of Swiss cheese.  Bake at 400 for 10-15 minutes or until cheese melts and begins to brown.  Remove from oven and top with diced Roma Tomato.  Enjoy  ;)

How many carbs and proteins should I have every day!?

Today I had the good fortune to listen to a webcast by "Health Queens" and picked up some great information that backs up exactly what I already believe.  Eating healthy can be hard enough without worrying about knowing how many carbs and protein we should be eating every day.  Its EXHAUSTING !!!  Regardless, we still have a responsibility to adopt healthy eating patterns.  As we strive to improve our diets, we will begin to develop new improved habits.  Habit puts willpower on autopilot.  Changes in lifestyle and behavior can be tough in the beginning, but become effortless when you turn them into a habit. That being said, below is a good chart that will help you place yourself in the correct category for daily intake.  There is a vast variance due to health and activity levels from person to person.  I personally think carbs are the devil and encourage most people to stay around 85-100 carbs per day for optimal health ( this is my personal opinion based on my own experience). Protein can turn into carbs during digestive breakdown, but carbs can never turn into proteins. That being said, I strive to keep my proteins higher than or equal to my carb intake.  My favorite examples of healthy carbs are sweet potato, oatmeal, brown or wild rice, and fruit ( be ware that some fruits are extremely high in carbohydrates and should be eaten in moderation, think banana for example.  Berries and apples are super choices).  Also, beans, vegetables and low fat dairy are great sources of healthy carbs. PS  just another plug for exercise if you are a carboholic, move more to carb more ...  ;)

Lastly, If you want to lose fat, build muscle, or just be a healthy, well-functioning human being then you have to be aware that protein intake plays a crucial role in allowing all of that to happen properly!  Protein is essential for building and repairing things, ... kinda important.  Protein helps with losing fat when eating a sufficient daily amount by preserving your muscle and burning fat instead, a KEY DIETARY FACTOR !!!  Secondly, research clearly shows that protein is by far and away the most filling macronutrient.  If you want to be satiated, eat protein !!!  If you like the idea of controlling your hunger, curbing your appetite, and staying full and satisfied, then protein is your best friend!!!  Lastly, protein has the largest thermic effect of all the macronutrients, in simple terms it requires the most energy to digest.  Did you realize your body actually burns calories during the digestive process, yep its true !!!  Of course, just increasing your daily protein intake alone won't create enough of an extra calorie burn to cause significant and sustained fat loss, but it will help.  To finish, if building muscle is your goal, without enough protein, your body just can NOT ( and will not) build muscle.  So how much protein do I need on a daily basis!?  I heard a simple calculation today that gives us the answer.  Multiply your weight by .7-1.1 and that will give you your daily requirement in grams per day.  For example, I weight 123 pounds~ so that means I need 87.5-137.5 grams of protein a day.  Pretty much where I was already hanging out, but love the reinforced data !!!  So, if protein isn't your best friend by now, then I haven't done a very good job !!!  In fact, I love protein so much that I wouldn't mind buying a charm bracelet with a chicken breast dangling from my cuff !!!  Examples of excellent protein choices would be white fish, white chicken meat, turkey breast, egg whites, lowfat cottage cheese, almonds, soy beans, protein powders ( check your labels) and some protein bars ( look at your labels for hidden sugars).  A great tip I picked up this morning is to start your day with 30 grams of protein with in the first 30 minutes of arising.  While I get about 30 grams in my first meal, I don't always get to the kitchen in the first 30 minutes, but usually within the hour.  Hope this article helped you out, and please feel free to contact me with any questions !!!  I would love to hear from you~ In good health, paige  ;)

Tuna Tarragon Pasta Salad

Not to brag, ... BUT ...  eeehhheeemmm.... this turned out TERRIFIC !!!  I was pretty full of myself this afternoon after I created this !!!  I wanted to double the tuna but not double the pasta, so instead I added a can of peas for the additional starch vs additional pasta.  Also, I chose a Gluten Free All Natural Brown Rice Pasta Penne with Golden Milled Flax Seed.  This pasta is also wheat, dairy and egg free, as well as rich in whole grain. Lastly, a excellent source of Omega-3 Oils.  The best part is that "The Hubs" said he would not have known it wasn't regular pasta...( had he not already suspected I wouldn't be serving him regular pasta) .... he's catching on to my game ...  ;)  And, I have to give a shout out to my friend Alice, an old neighbor who I miss terribly, who first introduced me to the magic of Tuna and Tarragon combo almost 20 years ago.  Alice was one of the best cooks I had ever met and was always creating amazing Italian dishes every night for her family ( it helps to grow up in an Italian family).  I have several of her recipes she shared with me and I always think of her fondly when I open my cookbook.  Cheers to you Alice for my inspiration today  :)

Tilapia Milanese with Kale and Tomatoes

I love following the Skinny Taste Blog, she has so many great ideas for cutting fat and calories.  One HUGE tip I picked up from her was using the PAM EVOO to use for spraying each side of your fish and sear it in that manner vs frying in EVOO.  Talk about a tremendous calorie saving !!!  Next time you cook white fish give that method a try!  ;)

Ingredients for Salad~
Kale, torn in pieces
Romaine, torn in pieces
Baby Spinach leaves
Baby Petite Carrots
Sliced Green Onions
Cilantro Leaves
Diced Tomatoes
Shaved Parmesan
Kraft Roasted Red Pepper Dressing
Salt and Pepper to taste

Toss together all greens, carrots and onions.  Top each individual salad with diced tomatoes, 1 Tablespoon shaved parmesan and Light Salad Dressing.

Ingredients for Tilapia~
4-6 Tilapia Filets
2 egg whites, whipped
2/3 cup Panko bread crumbs seasoned with salt, pepper and garlic powder
Sliced Lemon
Pam EVOO

Dip Tilapia in egg whites, followed by seasoned Panko bread crumbs.  Spray thoroughly with Pam EVOO on each side of filet and cook in hot skillet for 4-5 minutes on each side or til flakes easily.  Top with sliced lemon.  Enjoy  ;)

Coconut Lime La Croix and Ginger Soda

My friend Jane brought me a delicious new drink this week that I fell in love with !!!  Thank you JANE !!!  If you have not heard about La Croix then give it a try.  I'm not a big soda drinker, but I found this so refreshing, especially with a half a lime squeezed in my Sparkling Coconut water!  The best part I noticed about La Croix ( and no, I am not being paid by La Croix) is that there are no calories, no artificial sweeteners,  and no sodium.  I call that a healthy indulgence !!!  There are only 2 ingredients~ carbonated water and natural flavor.  I also noticed there are other flavors to try as well.  I picked up some Berry and found that equally inviting.  When I was in the water aisle searching for the La Croix, I noticed a Ginger Soda that I thought I would try for fun and it was FANTASTIC as well !!!  I highly encourage you to give diet Vernors Ginger Soda a try the next time you are hankering for a little soda !!!  Drink away ... right after you have had your 8 glasses of water for the day ;)

Lemon Strawberry Danish Quest Bar

When I was surfing around on the Quest Nutrition website, I came across a similar recipe and so I thought I would try this baby out !!!  Not too shabby !!!  I love lemon and berries together, they are the perfect combo!!!  All this for 195 calories, 7g carbs, and 22g protein.  ;)

Ingredients~
1 lemon Quest Bar
1 Tablespoon Lowfat Cottage cheese, pressed to remove any excess liquid
1/2 cup diced fresh strawberries
Dash lemon juice
Dash Stevia
Dash Cinnamon

Microwave Quest Bar for 15 seconds and pat into large rectangle on Silpat lined cookie sheet. Mix cottage cheese, stevia, lemon juice and cinnamon to desired taste.  Spread cottage cheese down middle of rectangle and top with half of strawberries.  Put small slits down each side of rectangle and fold to meet each other in middle.  Bake at 400 for 6 minutes and top with other half of strawberries.  Enjoy  ;)
