Lomo Saltado (Peruvian Beef Stir Fry)











     It's my 19th wedding anniversary and I'll eat potatoes if I want to!!!  ( hee hee) ...  I saw this recipe on Skinnytaste.com and Gina is a GENIUS !!!  She just came out with a new Cook Book, check her out and enjoy all her fabulous lighten up savory recipes !!!  I have found lots of great dinner ideas from her.  Tonight was particularly yummy, but who wouldn't be wowed by steak and potatoes !!! This dish makes 3 hearty servings, each serving is 308.5 calories, 24g carbs, and 28g protein. It ain't bad folks  ;)

Ingredients for baked fries~
8oz potato
1.5 teaspoon EVOO
Dash Salt, Pepper, and Garlic Powder

     Use Mandolin to slice potato's in thick slices, then slice into potato strips.  Toss with EVOO and lay in single flat layer on Aluminum Foil lined cookie sheet.  Sprinkle with Salt, Pepper and Garlic Powder.  Bake at 400 for 25 minutes, or until golden brown.

Ingredients for Beef~
3/4 pound lean Sirloin, sliced in thin strips
Salt, Pepper, and Cumin to taste
1 teaspoon EVOO
1 medium Red Onion, diced
1 Yellow Bell Pepper, sliced
1 large Jalapeno, ribbed and seeded, sliced
1 heaping teaspoon chopped jarred garlic
1 medium Tomato, diced
1 1/2 Tablespoon low sodium Soy Sauce
1 Tablespoon Apple Cider Vinegar
1/2 cup chopped Cilantro

     Season Sirloin with Salt, Pepper and Cumin, set aside.  Heat skillet with EVOO and add Onion and Garlic til golden brown.  Then add Jalapeno til softened, then add Bell Pepper til crisp tender. Add strips of Sirloin til browned on outsides, then add Tomato, Soy Sauce and Vinegar and heat thru.  Stir in Cilantro and serve in 3 dishes and top with baked French Fries.  Enjoy  ;)
