My Famous Orange Rolls

     My Famous Orange Rolls are a family favorite around these parts!!!  So I decided to set out to make a healthier version to enjoy guilt free.  Mission Accomplished!!!  If you don't believe me, try it for yourself!!!  LOVE LOVE LOVE!!!  This recipe makes 24 rolls, each roll is 61 calories, 1.4g net carbs, and 6g protein.  Roll on baby  ;)

1 Fast Acting Yeast Packet
1/4 cup Erythritol
1/2 cup Almond Milk ( I use 30 cal/cup)

2 scoops Multi Purpose Quest Protein Powder
2 scoops Vanilla Milkshake Quest Protein Powder
1/2 cup Psyllium Husks
2 Heaping Tablespoons Rice Protein Powder
1 Jumbo Egg
1/3 cup Egg Whites
1/3 cup Oat Flour
2 Tablespoons Coconut Oil
1/2 cup Erythritol
1 teaspoon Baking Powder
1 teaspoon Salt

Zest of one Orange
2 Tablespoons Coconut Oil
1/3 cup Erythritol
Dash Cinnamon

     Combine first set of 3 ingredients ( Yeast, Erythritol, Milk) and let yeast dissolve in mixture, set aside.  Meanwhile combine the second set of ingredients in food processor along with the yeast mixture and blend til thoroughly combined.  Cover with towel and let rise for one hour.  Lastly, combine zest of one orange, 2 Tablespoons Coconut Oil, 1/3 cup Erythritol and dash Cinnamon in bowl, set aside.  After dough finished rising, grease Silpat with Coconut Oil ( because dough will be sticky) and divide dough in half.  Pat each half into large rectangle on greased Silpat and spread half of zest mixture on dough, roll up lengthwise, slice into 12, transfer rolls onto Silpat lined cookie sheet and bake at 375 for 8-10 minutes, repeat with other half of batch.  Make sure to not over bake, as protein products continue to bake while cooling. Remove from oven when still slightly wet looking.  Enjoy  ;)
