German Chocolate Cake Cookies
Ask and ye shall receive! My friend, was having a hankering for German Chocolate Cake Cookies and so I offered to make a healthy version to enjoy guilt free. And I must say, these don't taste healthy at all (we should do a blind taste test), these are amazingly delicious as well as pleasing to the eye! Beauty, flavor and nutrition all in one ooey gooey coconutty circle! Each of the 4 cookies are only 85 calories, 4.4g net carbs and 5.5g protein. And here I didn't think I liked German food ... Danke' schon Germany ;)
Ingredients for 4 Cookies~
2 Medjool Dates
1/3 cup Water
1 Quest Double Chocolate Chunk Protein Bar
2 Tablespoons unsweetened shredded Coconut
1 Tablespoon Pecan chips
1 Tablespoon Lakanto Monk Fruit~use code Paige20 at checkout for discount
2 squares Lily's Sea Salt Stevia Sweetened Dark Chocolate
Put Dates in about 1/3 cup Water in small bowl, enough to cover Dates, and soak for 30 minutes. Meanwhile, divide Quest Double Chocolate Chunk Protein Bar into 4 equal pieces and microwave for 10-12 seconds til softened and pat into large thin cookie shape, place all 4 cookies on Silplat lined cookie sheet and bake at 375 for 5 minutes, remove and cool, set aside. After Dates are done soaking remove from Water, reserve Water and remove seeds from Dates, add seedless Dates and 2 Tablespoons of the reserved Water to Magic Bullet and blend til fully incorporated (make be some chunks left but that's ok and to be expected). Stir in Coconut, Pecans and Granular Erythritol til well mixed and spread equally on top of each cookie. Add 2 squares of the Lily's Sea Salt Stevia Sweetened Chocolate Bar to baggie and microwave for 20-30 seconds til melty, snip corner of baggie and drizzle on cookies. Enjoy ;)
