Alfredo Sauce







     Don't you just love learning new things!?  I discovered Tami at The Nutmeg Notebook, and learned about a healthy Alfredo Sauce substitute that you are going to appreciate.  Her recipe calls for Almond Milk, so I tried that along with a batch made with 0% Greek Yogurt, and a low fat Cottage Cheese.  Here are the result for each ENTIRE recipe:  Almond Milk is 85.5 calories, 17.8g carbs, 6.6g fiber, 11.2g net carbs, 6.1g protein and 1g fat.  The zero fat Greek Yogurt is 108 calories, 19.2g carbs, 6.6g fiber, 12.6g net carbs, 11.8g protein and .3g fat.  The low fat Cottage Cheese is 123 calories, 20g carbs, 6.6g fiber, 13.4g net carbs, 12.3g protein and 1.6g fat.  These were all very nice in flavor and would make a great addition to any meal.  I topped mine on a salad with steamed veggies, roasted Japanese Sweet Potatoes and mini Bell Peppers...and savored every bite!  #yum

Ingredients for entire batch of Alfredo Sauce (1-1.5 cups depending on version)~

9oz (approximately 2.5 cups) chopped fresh Cauliflower

1 Tablespoon Lemon Juice

1 Tablespoon fresh chopped Garlic

1/4 cup Almond Milk, or 0% Greek Yogurt, or low fat Cottage Cheese~macros above respectively

Dash Onion Powder to taste

Dash Cayenne Pepper to taste

Dash Pepper to taste

     Steam Cauliflower, I add mine to microwave safe bowl with a dash of water and microwave 4 minutes, adjust per individual settings.  Add cooked Cauliflower along with remaining ingredients to food processer or blender and mix til smooth, and fully incorporated, store in fridge.  Enjoy  :)
