Oatmeal Chocolate Chip Mug Cake





     Fast, simple and delicious...all qualities I love in the kitchen! ...and then straight to my mouth.  This is a perfect Vegan dish that works well for breakfast, snack or dessert.  The entire thing is a perfect 250 calories, 52g carbs, 10.5g fiber, 2g sugar alcohol, 39.5g net carbs, 5.5g protein and 6g fat.  The other bonus, I make this in a 2 cup pyrex bowl that comes with a lid, so great for prepping ahead, and  taking on the go.  PS  your kids will love this one too!  ;)

Ingredients for one serving~

1/3 cup Oats

4oz ripe Banana

1/4 teaspoon Baking Powder

Dash Cinnamon

Dash Vanilla

1 Tablespoon Lily's Stevia Sweetened Dark Chocolate Chips

     Add Oats to Magic Bullet or blender, and grind to powder, set aside.  Add Banana to bowl and mash til smooth, stir in remaining ingredients, reserve a few Chips to sprinkle on top after cooking.  Coat the inside of a 2 cup pyrex dish with cooking spray, add batter, microwave for 1 minute, sprinkle reserved Chips on top.  Enjoy  :)
