Sweet Vegan Brownies





     Don't you love it when all the stars in the universe line up and deliver all kinds of yum!  These Vegan Sweet Brownies are an example of what you will want to make again and again.  Each of these 9 pieces are only 172 calories, 29.2g carbs, 5.7g fiber, 7.6g sugar alcohol, 15.9g net carbs, 5.9g protein, and 9g fat.  The next time Chocolate is on yo' mind, might I suggest you give these babies a whirlie!  :)

Ingredients for 9 Brownies~

1 cup baked mashed Sweet Potatoes 

1 medium (approximately 4.5oz) mashed Banana

1/2 cup Peanut Butter (I prefer Chunky)

1/3 cup Lakanto Golden Monk Fruit~use code Paige20 for discount at checkout~sub with Lakanto Classic Monk Fruit

1/4 cup 30cal/cup Almond Milk

1 cup Oats, grind to flour in Magic Bullet/Blender

1/2 cup Cocoa Powder

1 teaspoon Baking Powder

Dash Cinnamon

Dash Vanilla

2 Tablespoons Lily's Stevia Sweetened Dark Chocolate Chips

     Clean Sweet Potato, prick with knife, slow roast on silpat lined cookie sheet at 325 for 90 minutes, increase heat to 400 and roast an additional 30 minutes, remove from oven, cool to touch and scrape pulp to yield 1 cup, add to mixing bowl.  Beat with mixer, add in mashed Banana, Peanut Butter, Monk Fruit and Almond Milk til thoroughly blended.  Add in Oats, Cocoa, Baking Powder, Cinnamon and Vanilla til fully blended, pour into 8X8 parchment lined pan, bake at 350 for 30 minutes, remove and sprinkle with Chocolate Chips.  Enjoy  :)
