Japanese Fuji Salad





     Looking for a fun Vegan small Salad!?  Even perfect for a pre or post work out option.  Full of energetic carbs, each Salad is only 210 calories, 50.6g carbs, 6.1g fiber, 44.5g net carbs, 2.3g protein and .4g fat.  Double this for a small meal, or add some protein to turn it into a nice dinner.  Either way, this is an amazingly flavorful treat, that will delight your senses!  Plus, found a new Balsamic company, California Balsamic (Californiabalsamic.com), check them out for an array of amazing flavor choices~yum yum! 

Ingredients for one small Salad~

2.5oz Japanese Sweet Potato (sub with regular Sweet Potato, macros will be less)

2 cups chopped Romaine Lettuce

Small lunchbox chopped Fuji Apple

1 Tablespoon Sweet Apple Pie Balsamic Vinegar from California Balsamic (sub with favorite Balsamic)

Optional Vegetables for garnishment, Carrots, Broccoli, Green Onion, Bell Pepper

Pepper to season as desired

     Wrap Potato in foil, bake at 425 for 1 hour.  Meanwhile, add chopped Romaine and Apple to bowl, drizzle with Vinegar, add extra Vegetables and Pepper if desired.  Remove Potato, chop and toss on top.  Enjoy :)
