Olive Oil Chocolate Cake






     Doesn't it sound strange to use Olive Oil in a cake!?  Well, luckily I am totally into the unusual, especially when combining new flavors which lead to new experiences.  This is outrageously simple and delicious.  Each of the 6 pieces are only 270 calories, 22g carbs, 3.7g fiber, 16g sugar alcohol, 2.3g net carbs, 6.8g protein and 26.5g fat.  I love this simple unassuming dessert, perfect to have around as a healthy snack.  Be prepared to be amazed.  ;)

Ingredients for 6 servings~

1/2 cup Olive Oil

3 Extra Large Eggs

1/2 cup Lakanto Golden Monk Fruit~ (feel free to sub with Lakanto Classic Monk Fruit)

1/2 cup Almond Flour

1/2 cup Cocoa

2 teaspoons Baking Powder

Dash Cinnamon

Dash Vanilla

Lakanto Confectioners Monk Fruit, as garnish if desired

Berries, if desired for garnish~not included in macros

     Add Olive Oil, Eggs, and Monk Fruit to mixing bowl and beat til thoroughly combined, continue to add in remaining ingredients and pour into cooking sprayed and parchment lined 8" spring form pan, bake at 325 for 35 minutes, remove and cool.  After room temperature, unsnap ring and flip over onto cake plate, garnish with Confectioners Monk Fruit and Raspberries if desired.  Enjoy  :)
