Cookie Dough Fudge






     Cookie Dough might just be close to the #1 favorite food in America the world.  So why not make it into fudge and have it right at your finger tips.  Now, this is fine straight in your mouth, but even better on Apple slices.  For a fourth of this recipe, it is only 360 calories, 55g carbs, 11g fiber, 18g sugar alcohol, 26g net carbs, 15.5g protein and 20g fat.  Try this fun experiment the next time you have a no no craving coming on, and see if this kicks that craving to the curb!  This may be a lot for 4 servings, feel free to make it 8!  :)

Ingredients~

1 cup dried Garbanzo Beans, or sub with 2 drained cans

1/2 cup Peanut Butter 

1/3 cup Lakanto Golden Monk Fruit

1/4 cup Lily's Stevia Sweetened Dark Chocolate Chips, use more if desire, will need to adjust macros

     Add dried Beans to bowl and cover by a couple inches with water, soak overnight, drain, add to pot, cover with water, simmer with lid for 2 hours, drain, add to Vitamix or food processor, might need to add a Tablespoon or two of the boiled Bean water, blend til smooth, add Peanut Butter and Monk Fruit and continue to blend, set aside til cooled.  When room temperature, stir in Chocolate Chips, add to parchment lined loaf pan, chill overnight in fridge.  Cut into 4 equal portions.  Enjoy  :)
