Greek Balsamic Feta Salsa with Home made Tortilla Chips






     If you want a healthy Salsa option, I have a great idea for you !!!  Whip together some Salsa with a Greek twist, AND make some Home Made Tortilla Chips to go along with it !!!  ( refer to my Homemade Tortilla recipe for instructions). This recipe makes 2 cups, the entire recipe is 230 calories, 16g carbs, and 13.6g protein, so up to you how you want to divide serving size. If you want to get 4 servings at a half cup each, then it would be 57 calories, 4g carbs and 3.5g protein.  Add 8 Homemade Tortilla chips for 60 calories, 3g carbs and 5g protein, and you have a wonderful little nutritious snack, totaling 117cal, 7g carbs and 8.5g protein !!!  ;)

Ingredients~
1 cup diced Roma Tomato
1.5 cup diced Cucumber
1/2 cup Lowfat Reduced Fat Feta Cheese Crumbles
1 Tablespoon Diced Purple Onion
1/2 Tablespoon EVOO
1 Tablespoon Balsamic Vinegar
Salt and Pepper to taste

     Mix together and enjoy !!!  ;)
