One Pot Black Bean Chicken Lo Mein
One pot meals are a dream come true!!! It really emphasizes my lazy inner self !!! ... But, hey ... Anyhoo, if you have a chance to make dinner all in pot, take it !!! This makes 4 huge hearty servings, each serving has 376.5 calories, 21.5g carbs, and 49g protein. And I have to tell you that the Organic Black Bean Pasta is the BOMB !!! It has 25g protein and 12g fiber in each serving, this is a nutritional powerhouse !!! :)
Ingredients~
8oz Black Bean Spaghetti
1 pound boneless skinless chicken tenders diced ( or you can break apart in pot after cooked)
4 1/2 cups chicken broth ( I use 4.5 tsp LB Jamisons Chicken Base with 4.5 cups water)
1 teaspoon corn starch
1/4 cup Lite Soy Sauce
3 cups shredded carrots, reserve a few for garnish
1 1/4 cup chopped Red Bell Pepper
Dash Sriracha
1 teaspoon EVOO
2 heaping teaspoons chopped jarred garlic
1 Tablespoon Date Sugar
3/4 cup diced Green Onions
Add all the ingredients to large stock pot, bring to boil and cover. Reduce to simmer and continue to cook for 15 minutes, stirring occasionally, till most of liquid has cooked off. Divide into 4 bowls and garnish with a few shreds of carrot. Enjoy ;)
