Apple Pancakes with Date Syrup








     It's Apple Season and what better way to celebrate than Apple Pancakes !!!  This recipes makes enough for two, Half the Pancakes and one Tablespoon of Syrup is  245.5 calories, 26.5g net carbs and 28g protein.  Happy Fall ;)

Ingredients for Pancakes~
4oz Apple, Make 8 thin slices for garnish, and dice the remaining Apple
1/2 cup Oats
1/2 cup Egg Whites
1 scoop Vanilla Isothority Protein Powder, found at Supplement Giant Wichita
Yoplait 100 Apple Pie Yogurt 5.3oz
1/2 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla
1 Tablespoon Date Syrup ( recipe below)

     Grind Oats in Magic Bullet, then add Egg Whites, Protein Powder, Yogurt, Baking Powder, Cinnamon, and Vanilla, continue to blend well.  Drop by scant 1/4 cup onto hot Pam sprayed skillet.  Top pancakes with chopped apples onto uncooked battered top once in skillet and before you flip to cook the other side.  Stack and top with 4 Apple Slices and a Tablespoon Date Syrup.  Enjoy  ;)

Ingredients for Syrup~
2 Medjool Dates
1/2 cup water
1 Tablespoon Erythritol
1 teaspoon Vanilla
Dash Cinnamon
10 drops French Vanilla Stevia

     Soak the Dates in water for 30 minutes, drain and pit, then put in Magic Bullet with a fresh 1/2 cup water, Erythritol, Vanilla, Cinnamon and Stevia~blend til smooth.  Store in refrigerator.  One Tablespoon is 12 calories and 3g net carbs, and no protein.
