Pumpkin Pancakes
If only someone would come and make these for me every morning ...I need to figure out how to turn these weekend Pumpkin Pancakes into Monday thru Friday Pumpkin Pancakes (actually what I need is my mommy to come live with me and make me breakfast every day). On the other hand, weekend Pumpkin Pancakes seem to hold an extra special flare that can only be achieved on a Saturday or Sunday. Regardless, your elation will continue to escalate when you find out that the entire stack is only 279 calories, 7.5g net carbs and 31.6g protein. Pancakes for days :)
Ingredients for Pumpkin Pancakes~
1/4 cup Pumpkin
1 scoop Quest Vanilla Protein Powder
1 Extra Large Egg
2 Tablespoons Unsweetened Coconut Shreds
1 teaspoon Baking Powder
Dash Cinnamon
Dash Vanilla

1 Walnut, broken into pieces
10 Lily's Stevia Sweetened Dark Chocolate Chips
Mix first set of ingredients til well incorporated, drop by scant 1/4 cup onto Pam coated skillet, should yield 4 pancakes. Stack and top with Syrup, Walnuts and Chocolate Chips. Enjoy :)
