Vegan Taco Soup






     When you have to feed a crowd, this is a sure pleaser.  Not to mention this is made in the Crockpot...(I love love love Crockpot meals).  This also happens to be Vegan, feel free to add your favorite meat if you prefer a higher protein based meal.  Each of the 12 cups are only 195 calories, 36.3g carbs, 5.2g fiber, 31.1g net carbs, 8g protein and 1g fat...can you believe only 1g FAT!!!???  Top as desired, there are Vegan Sour Cream and Cheese options galore.  Enjoy :)

Ingredients for 12 one cup servings~

1 cup DRIED Black Beans~sub with 2 cans drained Black Beans and skip the soaking

3/4 cup Quinoa

3/4 cup Rice

4 cups Vegtable Broth (I use low sodium)

1 can drained Pinto Beans (sub with other favorite)

1 can drained Corn

2 cans UNDRAINED diced Tomatoes

1 diced Onion

1 Taco spice packet (Mrs Dash has a sodium free if desired)

     The night before serving, add 1 cup dried Black Beans to bowl and cover with water by 2-3 inches, in the morning drain off water and add to Crockpot, I always line my Crockpot first with a disposable Crockpot liner...#gamechanger, add the rest of ingredients and turn on low for 6 hours, or til Black Beans are tender.  Garnish as desired.  Enjoy  :)  Note~If you prefer your grains more on the al dente side, then wait and add them half thru the cooking time.
