Valentine's Crepes
Boots are made for walkin' but Crepes are made for lovin'! Valentine's Crepes are a perfect case in point. And the best part is, these can be devoured all year long... just make sure to budget them in on a day that is devoted to all things love. Valentine's Crepes are 375 calories, 55g net carbs and 7g protein for 3 Banana stuffed Chocolate and Strawberry topped Crepes, each Crepe alone is 69 calories, 9g net carbs and 1.3g protein. The batch makes 11 Crepes, so let your imagination run wild with filling options for the left overs! Sweet or savory, everything's better wrapped in home made Crepes. :)
Ingredients for 11 Crepes~
1 1/2 cups 30 cal/cup Almond Milk
1 cup Otto's Cassava Flour~Gluten/Grain/Nut Free (can sub with regular Flour)
1/2 cup Lakanto Monk Fruit~use code Paige20 for discount at checkout
2 Extra Large Eggs
1 Tablespoon Coconut Oil, melted
1 teaspoon Vanilla
Dash Cinnamon

1 medium Banana
1 square Lily's Premium Baking Bar (can sub with 1 Tablespoon Lily's Chocolate Chips)
2 teaspoons 30 cal/cup Almond Milk
6 small Strawberries, cut in half with "V" notched out of top

Optional: So Delicious Coconut Whipped Topping (not included in macros)
Optional: Heart Sprinkles (not included in macros)
Add first set of ingredients to mixing bowl and beat with electric mixer til frothy, pour on hot Pam sprayed 10" skillet by 1/4 cup batter per Crepe, making sure to swirl the batter to cover entire base of skillet til golden brown on each side. Note: watch for Crepe beginning to form pockets and note that as a signal to prepare to flip and cook other side. Remove to wire cooling rack til ready to use. Repeat 10 more times for total of 11 Crepes.
Divide Banana into 3 equal parts, slice each section and lay Banana coins down center of 3 Crepes and roll up and place side by side on plate. Meanwhile, break up Chocolate square and add to bowl along with the 2 teaspoons Almond Milk, microwave and stir til smooth, add to ziplock baggie, snip corner and drizzle over stuffed Crepes, retaining just a smidgen of Chocolate. Cut Strawberries into heart shape and slice in half and garnish atop of Crepes, drizzle remaining Chocolate over Strawberries. Garnish with Whipped Topping and Sprinkles if desired.
