Apple Pie Cheesecake with Vanilla Ice Cream

     Alrighty kids, mommy dun did GOOD on this here Apple Pie !!!  WOWZERS, you would not even know this was healthy unless you were told !!!  The addition of the Granny Smith Apple really makes the flavors pop.  This definitely has to be on your list to try as soon as possible !!! I'm patting myself on the back for coming up with this combo.  This 9'' Springform pan make 8 generous pieces, each piece has 197.5 calories, 13.2g carbs and 24.5g protein.  This is seriously good enough to serve at a dinner party, and no one would be the wiser!!!  Food is fun  ;)

4 Apple Pie Quest Bars
4 Yoplait Greek 100 calories Apple Pie Yogurts
1 cup Egg Whites
1/2 cup Whey Better Vanilla Ice Cream Protein Powder
Dash Cinnamon
Dash Vanilla
7oz Granny Smith Apple
1/2 teaspoon Coconut Oil
1 packet Truvia

     Remove bottom round from 9" Springform pan and spray with Butter Pam.  Remove wrappers from Quest Bars and microwave 2 of them, one at a time, in microwave for 15 seconds each and press into half of Springform round, then repeat with other bar til bottom round is completely covered.  Then snap back into place in Pan.  Then mix together, egg whites, yogurt, protein powder, dash cinnamon, and dash vanilla and pour half the batter into Springform Pan.  Meanwhile, Chop another Quest Bar into very small pieces, sprinkle onto top of batter, reserving a fourth of the bar bits for latter.  Gently spoon the rest of the batter on top of bar bits.  With remaining bar, slice into 6 long slices and roll between palms into rope like lengths creating enough length to cover the circumference, then lay around the perimeter of the pan end to end completing the circle.  Slice Apple in half and core each half.  Using a Mandolin, slice VERY THIN slices off Apple and lay in a circle pattern around the inside of the pan. Take your remaining bar bits and sprinkle into very center of Cheesecake.  Bake at 325 for 40 minutes.  While Cheesecake is baking, chop remaining Apple into small pieces and you should have a rounded cup left over.  Spray a skillet with Butter Pam and add a half teaspoon coconut oil to pan to melt, when hot add diced Apple, Truvia packet, and dash of cinnamon.  Cook til softened and syrupy, add dash of vanilla and let cook off ( it will evaporate rather immediately), set aside.  Remove Cheesecake and cool, let chill in refrigerator over night.  When chilled, serve a 1/8 of Cheesecake with an 1/8 of Caramelized Apple.  Enjoy  ;)
